How to make my family's favourite meals Vegetarian?!


Question: My family always makes things like Chicken Dumpling Soup (which is my favourite), but my mom's specialty. We recently had it, but i couldnt eat it because she used chicken noodle soup for broth! Broth is necessary to make it. I was really bummed out that I couldnt eat it. So what other things can I use to make it vegetarian but keep the taste the same? To make it we use these non-vegetarian ingredients:

-chicken broth
-chicken (it is chicken dumpling soup)

I would really like to keep the taste same for my familys sake...Its a very old family recipe!

Everyone's given you some great advice. Morningstar vegan Chik'N strips are a good replacement for the chicken, they taste kind of like chicken, their texture is more like chicken fat though... it looks like chicken and it tastes good however. You can buy a bag of it for three dollars at Super Target. Over time you might find yourself (like I have) that you don't really care to make "vegan"ized meat dishes and you'll just start making naturally vegetarian stuff.

for the broth, you can just use vegetable broth. my mom made potato soup tonight and substituted the chicken broth with vegetable broth. it still tasted the same to her! and i'm the one who's vegetarian. nobody noticed anything different.

as for the chicken, the only thing i can think of is maybe mushrooms? u can also buy fake frozen chicken. it's pretty good.

Well chicken broth is very easy to replace with veggie broth, but you are going to run into issues if you expect a non-meat substitute to taste "just like" the meat version. Sorry but in alot of cases they just don't.
You can try using morningstar meal starters to replace the chicken. I can't really say if it taste similar since I don't remember what the real thing taste like but I can tell you they are good and very versatile.

Vegetarian broth.
You can buy or make vegetarian dumpling, too. It's taste very good. Ingredients are bamboo shoots, mushrooms, green onions, baby corns, sweet peas, leeks, add other vegetables of your choice.

VEGETARIAN CHICKEN & DUMPLINGS SOUP

SOUP:

3-30 oz. cartons of vegetable broth
2 cups of water
1 large potato
1 or 2 large carrot(s)
1 medium onion (yellow or white, your preference)
6 oz. of mushrooms
2-12 oz. packs of veggie chicken
1 vegetarian boullion cube
pinch of tarragon
1 tbsp. of oregano
2 tbsp. of parsley
salt and pepper to taste

DUMPLINGS:

2 cups bisquick
2/3 cup of milk
1 to 2 tbsp. of parsley

DIRECTIONS:

Combine vegetable broth, water, boullion cube, and spices (minus salt and pepper) in pot and set on high to boil. Chop up carrots, mushrooms and potato, and dice onion and add to boiling broth. Don't make the carrot or potato pieces too small or they will dissolve into the soup! Reduce heat to a low boil and cover; leave alone for 20 minutes. After 20 minutes, add veggie chicken. **Veggie chicken is pre-cooked and doesn't need a lot of cooking time**

After adding chicken, mix dumpling ingredients in bowl and spoon-drop into boiling soup (NOTE: the dumplings won't be pretty and perfectly round, but if you try shaping this dough you will have some seriously doughy problems). Cover and let cook for 10 minutes, then remove cover and cook an additional 5-10 minutes.

Then eat!

You can use vegetable broth in place of the chicken broth.
For the chicken you can use one of these:

Lightlife Smart Menu Chik'n Strips
Morningstar Farms Meal Starters Chik’n Strips
White Wave Chicken-Style Meat of Wheat
--You could event try marinated cubes of tofu (freeze overnight, unthaw, cut into cubes and marinate in italian dressing)
