Does Halal only refer to meat, so that means 'there's animals in this', or could it also mean that it's possibly not animal-derived at all?

"Halal" means permissible for consumption under Islamic law. There are several criteria, such as no alcohol, no pork, meat properly slaughtered, etc. Something that is halal doesn't necessary have meat, but IF it does, then the meat needs to be prepared a certain way.

Halal is the equivalent of Kosher. So it does not mean no meat and is most often used regarding meat.
I've seen the "Halal" label even on vegan products, which, of course makes no sense, since you can't slaughter a vegetable. But I figured it means it's free of animal products period, (i.e. no traces of shellfish etc), making it halal.
I'm not sure if lacto-ovo is halal or not.
And of course, halal does not imply absence of meat if it's a meat product.
If it's a veg*n product that has come into contact with halal meat, it would be halal. But this situation rarely arises.
Halal means the food is acceptable to eat ("clean") by Islamic standards, just like kosher food is acceptable by Jewish standards.

Halal means "permitted." So that would be no pork, no blood, no shellfish (depending on halal definition), no alcohol. . .
I don't think you can rely on the Halal label to indicate whether or not it's vegetarian.
