Question: I'm a vegetarian, and so I'm used to preparing tofu, eggplant, and mushrooms in the place of meat for certain dishes, but what else can I use?

You can find it in most bulk food stores.

You can also try going to Asian grocery stores. They have tons of tons of interesting vegetarian things there. They usually label them vegetarian too, so you know they don't have fish in them either. I have bought many different kinds of tofu from these stores (deep fried puffs, homemade style, egg tofu), as well as the TVP I mentioned above, shaped in dry flat slices that just need to be reconstituted with hot water. If you're okay with fake meat stuff, they usually have frozen veggie chicken and shrimp, and even veggie abalone in a can.
