Vegetarian meal I can bring to school for lunch?!


Question: Something I can make in less than 15 minutes and bring for lunch that can stay in my bag or locker for hours.Nothing that has to be heated up because we have no oven or anything to heat food up.thanks

I would bring ingredients for a hummus sandwich. Hummus should be fine for hours in a locker, so will the veggies, but I'd assemble it right before eating. A pita, sliced cucumbers and tomatoes, maybe sprouts, with hummus!

Saute some chopped carrots, celery, garlic and onion in a pan with a little extra virgin olive oil, after about 3 minutes, pour a can of vegetable broth over it, pour in some rinsed white or black beans or noodles, heat it through in about 3 minutes, put it into a soup container and it should stay hot all day. I got my soup container at Wal-Mart in the lunch box aisle for $6. It works really well.
Another thing to think about is just cutting up some veggies and fruits and putting them into your lunch bag. If you freeze a juice box or two, they will keep your food good and cold and be thawed enough to drink at lunch time.

Soup in a thermos, salad, pasta salad. All yummy and vegetarian!

Have some wholesome carrots.
