The hardest thing is not overcooking or over-seasoning vegetables to the point where they have lost the nutritional value. I think we as Americans are addicted to salt, so tasting something closest to it's most natural state (when it's not a fruit) is like a shock to the tastebuds.

I think improperly prepared vegetables are the worst. I like most vegetables but the texture of root veggies (carrots, parsnips) really gets to me.
