What do vegeterians eat for xmas dinner?!
I'm not vegan, but have cooked many vegetarian dishes for thanksgiving. They usually involve some sort of pastry as well as cheese - i.e. Mushroom and Leek Phyllo with Gruyere... could give you lots of ideas there.
But minus the butter and cheese, its harder. Never touched Tofurkey before, seems scary. I did have a chickpea/eggplant tart that might be vegan if the phyllo is made w/o butter. Happy to post if you like. In a similar vein, have a recipe for fennel-scented spinach/potato samosas.
However, I do regularly make a vegan gravy, which everyone loves and I really recommend. Here is a summary - the original recipe was from The Kripalu Cookbook but I have made some additions:

My 17 year old daughter has been vegetarian for 10 years and she has exactly the same as everyone else except that instead of turkey she has Quorn Roast. And she has vegetarian sausages and bacon for the "pigs in blankets", and gravy made from Bisto Vegetable gravy granules.
my mum got me quorn chicken sorta thing with stuffing last year, yummy!! although im not a vegeterian, the only meat i eat is chicken! I hate turkey!! I'd happily eat mashed potatoes with gravy and peas for christmas dinner lol

Whatever they want... if it's just veggies, then it's all veggies, it they wnt a nip of meat for the celebration, they can do that too... They are not breaking any laws if they do that are they? I mean vegetarianism is a choice and not mandatory isn't?
If you are looking for suggestons and recipes, excluding our meat dishes, we will have some kinda of veggie casserole that my sister will make, probably a salad or salads, a potato dish and and pies and cakes ( made with eggs and cream/dairy of course) anybody is welcome tp partake regardless of diet choice.. and we don't squeal...
For just one day a year we eat meat, not just any meat though. It has to be fresh human flesh straight from the bone. You may think that I am joking but rest assured that on this day we turn into modern day cannibals and devour any meat eater that we can find.
Take this advise and lock your door from midnight on Christmas eve until boxing day, its not safe out there, we cant help it lol.
One way that you can protect yourself though is to wear a nut cutlet around your neck, we hate them!
I have had a variety of things on different Christmas's
* nut loaf, or lentil patties or
tempeh with lime & mango salsa
to name a few.
I often eat with non vegetarians so I will share the Christmas vegetables with them (baked potatoes in vegetable oil) and other vegetables.
We usually have salads as well and will be having a few this year on the christmas table with my extended family - everyone brings a salad.
Of course I still have some cranberry sauce and my mum's fantastic ginger beer and tea base punch (doesn't need alcohol it's so nice).
We will also have fruit and nuts, fruit cake and probably naughty desserts and savoury biscuits with dip (my downfall)over the day.
Maybe even a glass or 2 of champaigne or preservative free red wine or a nice beer, if it is hot.

there are lot of nice vegan dishes around, how about eggplant parmigianno, grilled zucchini, noodles, veggie slices, fruit salad, bread there are alot, and the variety will depends on what type of vegan are you, whether your a semi vegan ( in this case they can eat fish or chicken), Lacto ovo vegan ( you can have eggs and dairies) or a strict vegan.
I usually like to eat food... maybe with a side of drink.
Followed by dessert.

Roasted carrots and other vegetables.
Although being veggie, I HATE nut roasts/nut cutlets...they're so dry!
Last year I made a Moroccan spiced pie and this year I'm making a festive tart. The base is layers of filo and the filling is chunks of butternut squash, walnuts, cranberries and veggie blue cheese. Washed down with plenty of red wine! ;)
Other dishes I've made for xmas dinner in the past have been:
- mushroom wellington
- potato and smoked cheese strudel
- spinach and ricotta roulade
The majority of the time the meat eaters amongst the rest of my family ask for a slice to go with their turkey!

First, what is xmas? Why do you say xmas. It is CHRISTmas. If you take Christ out of CHRISTMAS there is no holiday so it doesn't matter what you eat.
I think it varies. Certainly at my annual Chistmas Eve gathering I prepare at least 3 roast geese replete with different stuffings, poached salmon, assorted seafood, a lovely Wellington, and an abundance of side dishes suitable for vegetarians and vegans as well as Christmas puddings and the proper apertifs and wines..
However, I find, as I have from my other many dinner parties throughout the year, that my veggie colleagues do prefer the goose, salmon and seafood. I send the veggie dishes home with them usually.
So I would say that it varies.
