I got all of these from a friend, and happened to have them on file. I'm not sure where she got them from, but she says they're good, so... yeah. Enjoy.

VEGETARIAN RECIPES
Creamy Spinach Dip
1 container nondairy sour cream (e.g., Tofutti)
2 Tbsp. lemon juice
1/2 cup salsa
1 pkg. frozen spinach, thawed and drained
1 pkg. vegetable soup mix

? Combine all ingredients and refrigerate for 1 hour before serving.
? Serve with raw vegetable pieces or chunks of crusty bread.??

Makes 10 to 12 servings

Light Spring Rolls
12 6-inch round rice wrappers (available at Asian groceries)
6 oz. rice vermicelli or cellophane noodles, cooked and drained
1/2 cup bean sprouts
1 cup shredded Chinese cabbage
12 snow peas, trimmed and cut into thin strips
2 scallions, chopped
2/3 cup grated carrot
1 cup shiitake mushrooms or baked tofu, slivered
1 bunch fresh mint leaves
Hoisin sauce (for serving)

? Immerse the rice wrappers, one at a time, in a bowl filled with cold water and let stand until the wrappers soften. Spread a towel on a work surface and place each wrapper on the towel.
? To assemble the rolls, arrange small amounts of each of the remaining ingredients, except for the hoisin sauce, on each wrapper, about halfway between the edge nearest you and the center of the wrapper. Fold the edge nearest you over the vegetables, then fold in one side and roll up lengthwise into a tight roll. Repeat with the remaining wrappers. ?
? Serve with hoisin sauce for dipping. ??

Makes 6 servings

Couscous Salad
5 oz. couscous
3-4 cups water, boiling
3/4 cup chickpeas
1 red bell pepper, roasted, peeled, and chopped
1/3 cup black olives, pitted
1/3 cup onions, chopped
3 Tbsp. fresh mint, chopped
3 Tbsp. olive oil
1 Tbsp. lemon juice
Salt, to taste
Pepper, freshly ground
5-6 lettuce leaves
5-6 fresh mint leaves

? Add the couscous to the boiling water. Cover and let stand for 2 minutes. Drain the excess water in the strainer and place into a dish. Add the chickpeas, bell pepper, olives, onions, and mint. Toss the ingredients with the olive oil and lemon juice and season with salt and pepper.?? Lay the lettuce leaves in a serving dish and pile the salad over the bed of leaves. ?? To garnish, make a flower in the center with the mint leaves.?? Refrigerate until ready to serve.??
Makes 4 servings
Minestrone Soup
4 cups vegetable broth
4 cups diced tomatoes
1 Tbsp. fresh basil, chopped
1/2 tsp. oregano
1 cup chopped carrots
1 cup chopped celery
1/2 onion, chopped
1 cup chopped zucchini
1 cup chopped yellow squash
1 cup green beans, chopped
2 garlic cloves, minced
1 1/2 bay leaves
Salt and pepper, to taste
1 1/2 cups uncooked macaroni pasta
? In a crock pot, combine all the ingredients except the pasta. Cook on low for 6 to 8 hours, or until the vegetables are tender. ?? Add the pasta and cook on high for 15 to 20 minutes, or until the pasta is tender. ??
Makes 6 to 8 servings

Big Oatmeal-Raisin Cookies
3/4 cup vegan margarine (try Earth Balance brand)
1/2 cup sugar
1 cup firmly packed fresh brown sugar
1 tsp. vanilla
1/2 cup soy milk
1 cup flour
1/2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. cloves
1 cup chopped walnuts
1 cup raisins
3 cups rolled oats
? Preheat the oven to 350°F. Lightly grease a cookie sheet. ?? In a large bowl, combine the margarine, sugars, and vanilla. Beat until fluffy. Blend in the soy milk. ?? Mix in the flour, baking soda, salt, cinnamon, and cloves. Fold in the walnuts and raisins. Stir in the oats. ?? Using a level 1/4 cup, scoop onto the prepared cookie sheet and flatten. ?? Bake for 15 minutes, until lightly browned. Remove from the cookie sheet with a spatula. Cool on a wire rack. ?

get soem vegetarian bean stuff (it might ahve been rosarita or somethign along those lines) and have vegetarian burritos. im a vegetarian and my mom makes vegetarian burritos all the time and they're really good.

Recipe for a simple ratatouille (Its delicious)
Ingredients:

1 medium sized onion, chopped
3 cloves garlic, minced
1 medium or large eggplant, diced
1 can stewed tomatoes
2 medium zucchini diced into large chunks
add herbs as desired (try basil)
olive oil (enough to sauté onion/garlic)
salt and pepper to taste
Directions:

Sauté the onion and garlic until tender
Add eggplant and tomatoes, bring to simmer
Simmer, covered for 15 minutes
Add zucchini
Simmer for 10-15 more minutes until vegetables are suitably soft
Remove from heat
Stir in the herbs, season to taste
Serve over:

Rice
Egg noodles
Pasta
Boiled, cubed potatoes

Vegetarian spring rolls.

Ok I have a semi-easy recipe for Eggplant Parm that tastes absolutely delicious.

2 large eggplants
2 different kinds of pasta sauce of your choice
2 different kinds of cheese (I go with Mozarella and Parmigiana)
Whole wheat Italian flavored bread crumbs
Eggs
Salt
Pepper
Garlic

1)Peel and cut the eggplant into rounds and soak them in salt water in a large bowl for 15 minutes.
2)Bread the eggplant rounds (this takes a while)
3)Place the breaded eggplant on a baking sheet in the oven at 400 degrees for 10 minutes. Flip the eggplant over and cook for another 10 minutes.
4)Pour one kind of pasta sauce on the bottom of the pan you are using (I like to use a bread pan), then place a layer of eggplant, put the 2 different types of cheeses on it, then the other pasta sauce.
5) Repeat this process until you use up all your eggplant.
6) Put it in the oven at 350 degrees, cover the pan with tin foil and bake for half an hour.

Some people are vegetarian because of food allergies. Best find out if there is anyone with food allergies so you don't accidentally cause them to go into anaphylactic shock and respiratory arrest.
