If you don't eat a vegetarian diet correctly you could encounter anemia, calcium deficiency, high cholesterol (cholesterol is actually most affected by a compound in diary products, not actual meat cholesterol, so if you only ate cheese, you would have a problem), protein deficiency, obesity, and malnutrition. Basically, not eating a healthy diet is not eating a healthy diet whether vegetarian, vegan, or regular.
