What should I make for Christmas breakfast (vegan)?!


Question: It's tradition for my family to have a big breakfast/brunch thing on Christmas morning instead of a dinner. Last year, all I ate was some toast and an orange because there was nothing vegan for me to eat. Any ideas of what I should make this year? Something with a little more kick than toast?

That pancake recipe up there looked good...

Here are some suggestions for yummy breakfast foods that are not healthy, but are good for special days when you get to indulge a little (it's christmas for crying out loud... eat granola the other 363 days of the year).

French toast. Surprisingly easy- just find a bread you can eat (I usually use a Country Loaf artisan bread found at the regular grocery store). Mix a little soy milk and egg replacer in a shallow dish, and add a dash of vanilla. Should be a little frothy. (To be honest, you can even do it without the egg replacer) Dip a thick piece of bread in it, QUICKLY, and then fry it on the stovetop! Add maple syrup or whatever you like.

Fried taters! Slice 'em up, slice up some onions, fry 'em with some Earth Balance margarine, add salt. Basic and yummy.

There's always good old tofu scramble. I like it my own way instead of with the box mix. I cook the crumbled tofu with some onions, mushrooms, a tiny bit of turmeric, etc.

OR for something that is hearty but a meal all in itself, breakfast burritos. With or without the wrapper.

Banana Walnut Pancakes

3 servings
25 min 15 min prep

1 1/2 cups whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 cups soymilk
1 teaspoon vinegar
1 tablespoon canola oil
1 teaspoon vanilla
3 medium bananas, mashed
1/2 cup walnuts, chopped

Sift together first 5 (dry) ingredients. In a separate bowl combine soy milk and vinegar. let sit for five minutes.
Mix bananas and other wet ingredients until pretty smooth. Poor wet into dry -- but don't overmix! Fold in the walnuts.
Brush a large nonstick skillet with canola oil and heat over moderate heat. Pour about 1/4 cup batter per pancake into hot skillet and cook until bubbles appear on surface and undersides are golden brown, 1 to 2 minutes. [You should get nine pancakes, allow three per serving]. Flip pancakes with a spatula till cooked through, 1 to 2 minutes more.

Transfer to a large plate and loosely cover with foil to keep warm.

Serve with sliced bananas and maple syrup.

Whole Grain Waffles

6 servings
15 min 5 min prep

2 cups whole wheat pastry flour
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt (optional)
1 teaspoon active dry yeast
1/4 cup water
1 teaspoon honey or maple syrup
1/2 cup ground flax seeds, cooked in 3/4 cup water
1 cup soymilk
1 lemon, juice and zest of

Sift together dry ingredients, while cooking the flax meal. Add wet ingredients, then lemon zest and juice. Add the cooked flax last watch the batter fluff up! Depending on the size of waffle iron, you may need to thin down the batter with a little extra soy milk. Cook according to manufacturers instructions. Serve with butter/earth balance and some natural maple syrup or honey.

As you have a few days yet, why not make yourself a healthy vegan muesli or granola, with oats, rye flakes, millet, dried fruits and nuts, sweetened with a natural sugar or if you use honey, some rice flour for a binder, just mix all the ingredients in a big bowl, then toast in the oven for 30 minutes at 325 d F.

Let it cool, and then break it up, I put mine in a plastic bag and run a rolling pin over it, do not pulverise it. Then on the Saturday before Xmas, buy a few berrys, there cheap this year, and mix them in with some soya yougart or soya milk, it is a bit more substance than just toast and an orange, I make mine and take it with me.

Alot depend on how strict a vegan you are, but as most will not eat any dairy, eggs, fake meats or certain grain products, I make a healthy pancake ( with oat flour, W Wheat flour, bran, brown sugar, soya milk and s ome baking powder, a bit of oil) and serve it with natural maple syrup or a apple juice reduced down to a syrupy texture with a few raisins in it, there are crepes you can make with rice flour and no eggs, in India they call them dosa, they are generally filled with a veggie curry, something a bit much for Xmas morning, but they can be filled with fruit or a veggie mushroom and tofu filling.

how about a big yummy fruit salad, and smoothie, and muffins

vegan banana blueberry muffins
2 very ripe bananas, mashed
1/2 cup white sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup all-purpose flour
1/2 cup whole wheat pastry flour
1 1/2 teaspoons egg replacer (dry)
2 tablespoons water
1/2 cup blueberries

1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
2. In a large bowl combine mashed bananas, sugar, baking powder, salt and flours; mix until smooth. In a small bowl or cup combine egg replacer and water; stir into banana mixture. Fold in blueberries.
3. Spoon batter evenly, about 1/4 cup each, into muffin cups.
4. Bake in preheated oven for 20 to 25 minutes, or until golden brown.

You will need:

325 degree F. oven for glass dish
2 quart flat glass baking dish with a 1/1/2 to 2 inch side
1 cup liquid measuring cup
1 cup dry measuring cup
2 bowls
1 Mixing bowl
Mixing fork or spatula
Fork to layer peach slices
Hot mat or heat safe surface
2 pot holders
Ingredients

Ingredients:

1 stick corn oil or other non-dairy margarine
1 cup self-rising flour (Martha White)[Do not have to sift]
1 cup granulated sugar
29 ounce can Del Monte Sliced Peaches, drained
----------with Peaches and juice reserved in separate bowls for use
2/3 cup peach juice from the peaches
Cinnamon powder


Place margarine in baking dish and place into the oven to allow the margarine to melt. Place measured flour and sugar in mixing bowl. Stir with fork. Add the measured peach juice to the flour/sugar mixture in the mixing bowl using the fork to mix well.

Using pot holders, Remove the hot baking dish that contains the melted butter from oven. Place on heat protected surface.

Pour flour/sugar/juice mixture from mixing bowl into the melted butter. Mixture will puff.

Using fork, place the peach slices into the puffed batter in a row type pattern, placing peach slices throughout the entire surface area of the batter (the peach slices will sink into the batter).

Sprinkle with powdered cinnamon.

Place container back into oven (remember to use pot holders); bake for approximately 45 minutes OR until golden brown. Serve hot.

Can be made ahead, refrigerated (covered) and heated the next day in the microwave. Can be served with ice cream or Cool whip although I know this would not be your preference. Freezes well in individual containers.

Note: baking times can vary. I'd allow up to an hour.
Milk can be used; when milk is used the baking time until the top of the cobbler reaches desired golden hue is reduced.
Canned apple slices may be used; use apple juice in place of peach juice.

If you bake in metal pan or throwaway metal container, increase oven temperature to 350 degrees F. Again, baking time may and probably will vary. I'm always close by the oven after baking 30 minutes any way. The cinnamon is optional but I always add it to the top before baking. Liquid cinnamon in the cobbler is Not an optioon.

You don't even have to mention this dish is Vegan.
No eggs, no dairy. You can drink with vanilla soy milk or coffee or other beverage of choice.

Or make a pot of lentils and brown rice , whole canned tomatoes, I add artichoke hearts, hearts of palm, hot sauce, kalamata olives, red roasted peppers, and cook it up. Delicious hot or cold.
Sometimes I vary it and make it mex stye with enchilada or chili sauce and black olives

Carrots.

If you eat eggs, go into google and type in "zip lock omelets" and you'll find some recipes where you mix everything up ahead of time and then boil the bags the morning of--and you can prepare the omelets anyway you and/or yours like them so that everybody has a choice.

well, every Christmas we have a big bacon and egg breakfast with toast and orange juice...its is SO good. and if you dont want toast croissants are really good to!
