How does one go about forming a legal freeganism, pescetarianism, pollotarianism and flexitarianism society?!

Question: dunno for sure but i think you have to be designated by the government as the "official governing" body.. . seriously doubt that it would ever happen though... that would like having a governing body for say "Sexual Preferenes Society" with officials rules and regulations ( and the punitive actions for non-compliance) as how one can have sex..

Three of those terms apply to diet, aspiring to vegetarianism but allowing seafood, chicken and occasional lapse with other meats. The fourth is about anti-consumerism. So it’s an issue of how you source your food.

One strategy is to attempt to become self sufficient in food production, ideally with a plot of land close to the sea.
The more commonly used option of rescuing edible food from supermarket waste bins (something I’ve done, too much perfectly good fruit and veg. in particular is thrown away simply because of a notional sell by date.) is obviously hit and miss. But you are allowing yourself flexibility in your diet so it should be possible. I avoided any meat and fish for obvious reasons. It’s difficult, but could be done for life.

As for a society living that way, the obvious difficulty is that if no-one shopped at supermarkets, they’d go out of business and there’d be no bins to scavenge from. Impasse. Maybe look at some of the other self sufficiency lifestyle options too.
