Why do they spray fresh veggies with water at the market?!

To keep them hydrated and fresh looking.

Remember that vegetables in the ground require water to grow and stay fresh. After they are removed from the earth, they still require water or they would shrivel up. Living things have a high water content and water evaporates and so must be refreshed.

From a marketing standpoint, it keeps the color vibrant and the glistening of the water is appealing to the buyers eye.

To keep them hydrated and fresh. Ever taken greens home and just put them in the fridge? They wilt pretty fast.

So oneday they will grow and grow and GROW! So instead of buying a little carrot you get a SUPER carrot, which will keep you and your friends fed! ;-D

You know when you are eating a salad and the lettuce is nice and crisp that is because the vacuoles within the plant cells are full of water and the purpose of spraying them with water is to keep them crisp.

So the veggies don't dry out ... and I just love to turn the nozzles to spray out into the aisle. It's fun to watch people walking along looking at the produce and being "misted" with cold water.
