Vegan meal ideas?!

Question: My new boyfriend is vegan and I was thinking about cooking him a meal for christmas maybe an appetizer, main course, and dessert. I found a lot of recipes but I'm not sure which ones will actually be good, does anyone have a good menu or some recipes they have actually tried themselves and could recommend?
