Generally, it makes a great vegetarian feast if you choose two hot dishes and two cold ones (for 4 people). Add a hot side dish for every extra person.
Here are some ideas:
Ratatouille, served over cous cous
Butternut squash, baked or mashed, with or without brown sugar added.
A big dish of mashed potatoes with cheese and onions
Sweet potatoes cooked with apples and cinnamon, mashed.
Stuffed Zucchini, stuffed with lentils, rice & onion, baked.
A nice cabbage and potato soup, or a potato vegetable soup.
green salad with lots of veggies
Hummus with pita wedges and cucumbers for dipping.
Raw vegetables with ranch dip (I make mine from low-fat cottage cheese)
Baked apples with maple syrup and butter
Homemade whole wheat rolls
Italian bread with garlic or herb dipping oils and tomato slices
macaroni & cheese!
Carrot cake
Spice cake
Gingerbread with whipped topping
Enjoy the wholesome goodness of some freshly peeled carrots.

My family is Italian and my mom who is trying to be accomadating to me and my daughter (the vegetarians) is making manicotti, stuffed mushrooms, salad, etc. I'm sure she's making some meat item also but since she's doing all the cooking, I'm just glad to have such yummy non-meat options.
