You should only use the bananas and applesauce (as in the answer above) in a sweet recipe. Try these for plain bread:
? 1 egg = 2 Tbsp. potato starch
? 1 egg = 1/4 cup mashed potatoes
? 1 egg = 1/4 cup canned pumpkin or squash
? 1 egg = 1/4 cup puréed prunes
? 1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder
? 1 egg = 1 Tbsp. ground flax seed simmered in 3 Tbsp. water

Eggs are good and with out eggs your bread will not be the same.
mashed bananas = 1/2 of a large banana in place of 1 egg.
OR
1/2 cup of apple sauce = 1 egg
OR
Ener G Egg Replacer (which you should be able to find at almost any grocery store)
Trying to Replace eggs is like taking a bath with all of your clothes on.
Just skip them, the recipe will be fine. Unless it's Challah. You may have to add a little extra liquid (I can't say how much without knowing how many eggs. 2 eggs, I'd add about 1/4 cup extra liquid.)
I am assuming this is a yeast bread recipe. For a quick bread (uses baking powder or baking soda) you must have eggs.

Egg? I used to have a whole-grain organic bakery. Never used egg in bread, or anything else for that matter. It's not needed. We didn't use yeast either. Just quality flour, water, starter, sea salt. That's real bread.
