Vegan Christmas morning wife saver?!


Question: When visiting my family for the holidays one of our family christmas breakfast traditions is wife saver (it is like a breakfast lawsonia with layers of bready, ham, cheese, onions and you pour on a mixture of eggs and milk and then you sprinkle on a layer of corn flakes)

I have tried to find a vegan recipe for this and have had no luck, but maybe I am asking for too much hehe. Maybe it could be made with with bread soy milk, tofu, onions, corn flakes beans etc or something?? Does anyone have a recipe for this? Or any creative ideas on how to make one? Any ideas or or thought would be great!

1 Medium Potato, Cubed
1 (14 oz) Block Firm Tofu, Mashed
1 T Tamari
1/2 Roll Gimmie Lean Soy Sausage (about 7 oz)
1 (4 oz) Can Mushrooms, Drained
1/2 C Onion, Chopped
1/2 C Green Pepper, Chopped
1 t Minced Garlic
2 T Oil
1 t Basil
1/2 t Black Pepper
Paprika

Preheat oven to 325F. Place cubed potatoes in a bowl with a little water and microwave for 5 minutes. Start draining tofu. Meanwhile, saute the onion, green pepper, garlic, mushrooms, and soy sausage in oil until cooked through. After tofu has drained some, place in a large mixing bowl and microwave for 5 minutes. Place cooked potatoes in a colander to drain. When tofu is done microwaving, move to colander and continue to drain. When potatoes and tofu are drained well, return to mixing bowl along with tamari and mix well. Add in soy sausage mixture, basil, and black pepper. Transfer to an 8"8"2" greased baking dish. Sprinkle with paprika and bake for 35 minutes

OR TRY...
8-10 slices whole wheat bread, cubed
1 lb soft tofu, drained and crumbled
1 (14 ounce) package Gimmie Lean sausage flavor
1 red bell pepper, chopped
1 green bell pepper, chopped
1 onion, chopped
3 garlic cloves, chopped
2 cups soymilk
2 teaspoons dried thyme
2 teaspoons dried basil
2 teaspoons dried dill weed
2 teaspoons dried rosemary
1 teaspoon sea salt
1 tablespoon vegetable oil, plus more
vegetable oil, for baking

Heat the oil in a pan over medium heat. Cook the garlic and onions until soft. Add the veggie sausage and crumble up in the pan while it browns. Add the peppers and cook until soft. Take off heat.
Grease a 9x13 glass baking dish. Spread the cubed bread evenly in the pan.
Preheat the oven to 350°F.
In a large bowl, mix together the tofu, soy milk, seasonings, and the cooked veggies and sausage. Pout over the bread and let it soak for 20 minutes.

I'm sorry but the vegan alterrnative sounds disgusting. Maybe another recipe would be better. Is the family going to be OK with this "vegan" stuff? I mean it is a family tradition and it would be extremely rude to spring this vegan stuff on a family that is ominivorous. It simply isn't considerate or proper.
