Vegan Dinner?!
I can't use eggplant, tomatoes, or patatoes, as these can can inflammation.
Answers: I have lupus and I've heard that there can be great health improvement with changing your diet to veganism. I was wondering if anyone could give me a great meal that I can make for tonight.

Burritos are so easy and delicious for vegans. I love to take a whole wheat tortilla and put in black beans, rice, onions, bell peppers, tomatoes and salsa (none for you), spinach, onions, and anything else that sounds good.
Or you could heat up some brown rice and add vegetables and tofu (a little harder) or you could just get one of those Amy's vegan frozen dinners.
But the best: peanut butter and jelly!!!
well i like a spicy chickpea dish i make
1 can chickpeas
1/2 cup(uncooked) rice cooked still warm
2 or 1 large clove garlic minced
1 small onion minced
olive oil
2 tsp hot pepper flakes
2 tbsp lemon juice
sautee onions and garlic in olive oil until cooked add lemon juice and pepper flakes stir take off heat and add rice stir and add more pepper flake or lemon to taste
