Hey i have a can of pureed pumpkin what should i cook?!
Answers: i am a vegan..i have an 8oz canned pumpkin -leftover form the pumpkin pie i made..what can i make????not a desert..a healthy meal or snack..no sugar...
I have a really good recipe for you! I wouldn't say that these are extremely healthy but they are delicious, and they only have a tablespoon of added sweetener - in the form of maple syrup.
I really like this recipe for vegan pumpkin biscuits:
INGREDIENTS
2 cups unbleached all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
1/2 teaspoon ground allspice
3/4 cup canned pumpkin
1/2 cup soy milk
3 tablespoons corn oil
1 tablespoon pure maple syrup
1. Preheat oven to 450F. Lightly oil a baking sheet and set it aside.
2. Sift together the flour, baking powder, salt, and allspice in a large bowl, then set aside.
3. Combine pumpkin, soy milk, corn oil, and maple syrup in a medium bowl and stir until smooth.
4. Combine the flour mixture with the pumpkin mixture. Stir just until the mixture holds together; avoid over mixing, or biscuits will be tough.
5. Roll dough out on a lightly-floured work surface and roll out to 1/2-inch thickness. Using a 2-inch biscuit cutter or a drinking glass, cut out dough into rounds and place on prepared baking sheet. Reroll dough scraps and continue to cut out until all dough has been used.
6. Bake in the center of the preheated oven for 12 to 14 minutes, until tops are golden brown. Serve hot.
a yummy soup is the best i can think of with onions,veggie chicken stock,etc.
Add 8oz. soft tofu. Add spices like cinnamon, cloves, nutmeg, pumpkin pie spice or apple pie spice. Add a dash of sea salt. Blend in a blender or with an electric mixer. This will be a pumpkin mousse. Taste it first. If you have to add a sweetner, put in a tiny amount of Stevia. It is an herb. Stevia has no calories, and no chemicals. It is not related to nasty toxic sweetners like Aspartame or Splenda.
I am a former chef, and make soups, a filling for raviolis, in a veggie sauce for a tofu stew like the second lady said, and if you are into desserts there are amny things other than pies, puddings, cold souffles, cookies, squares and cakes.
I make a soup and it is a bit spicey, it is a Jamaican one called "JumpUp" soup, with onions, potatos, hot peppers, white kidney beans, callalo/spinach or kale and a bit of coconut milk, it is a nice pre dinner dish or as a main course with a piece of cornbread or whole wheat roll or with a nice salad.
Add a few ingredients and spices and you will have a wonderful pumpkin soup.
