When can I "offically" call myself a vegetarian?!

i would say from the time you start

You are a vegetarian when you begin, it's kinda like being pregnant, you either are or your are not, there is no in between. Welcome!

Every single day without eating meat

You are a vegetarian. If you can keep this up, then maybe you can become vegan. And then you can become pescatarian. Btw, good luck.

Whenever you decide to stop eating meat. Like now. It is important to keep it up, though and that can be hard, especially if you really like meat.

You already are. If you aren't eating any meat at all (this includes seafood, meat stock and broth in foods, gelatin), you're there.

You can call yourself a vegetarian the second you decide to not eat meat anymore. :)

You can call yourself a vegetarian anytime you want to. As long as it's not a "I just happened to not eat meat today" and it's an actual conscious decision to go vegetarian.

If you've just incidentally not eaten meat for a couple of days, then you're not a vegetarian. But if you decided to stop eating meat you are a vegetarian as long as you stick to it. So, assuming this was a conscious choice, you've been a vegetarian for 2 days.

Vegetarianism works in PHYSICAL-EMOTIONAL-MIND balance.
