Hummus and pita bread is a quick, nutritious snack or side dish. I often make my own hummus with canned chickpeas, cumin, lemon juice, garlic, and tahini. Morningstar Farms has a wonderful line of meat alternatives. It is important to remember that these products do not taste like meat; rather they have their own flavor which will grow on you quickly. Stir fries containing nuts or tofu are delicious and satisfying, especially with rice. Make your own peanut sauce with peanuts, coconut milk, chili sauce, and soy sauce. Process in a food processor until the nuts are ground fairly fine. Black bean burritos are one of our favorites. Tomatoes, olives, green onions, home made salsa and guacamole, and if you're lacto you can have cheese and sour cream. Veggie yaki soba is easy and delicious, also pasta primavera. Grilled Swiss on rye with Dijon mustard and tomato soup is easy and delicious. Or vegetarian chili or split pea soup and corn muffins. Progresso makes a really good vegetarian minestrone; sometimes we get a couple cans of that and a loaf of French bread. Home made cream of potato soup is really good (you won't miss clam chowder) with French bread. Mmmm. Falafel is easy from a mix; I have never made it from scratch. It can be shaped into patties and baked or fried. Edamame is a wonderful snack and finger food; and soy is really good for you--especially for women. And almost any meat recipe can be turned into a veggie one. For example: I make stroganoff with mushrooms instead of meat. Sometimes I substitute nuts for meat, sometimes tofu, and sometimes nothing.

Just a few of my favorites. Your diet is only limited by your imagination. Congratulations on going veggie; it is a decision I'm sure you won't regret.

Vegetarian Paella

2 teaspoons olive oil
8 ounces soy sausage, cut into 1-inch pieces
2 cloves garlic, minced
1 cup marinated artichoke hearts, quartered
1 cup sliced yellow squash
1 cup baby squash or sliced zucchini
1 cup sliced carrots
1 bunch asparagus, ends trimmed, cut into 2-inch pieces
1/2 cup frozen green peas
14-ounce can diced tomatoes
6 to 8 saffron threads
1/2 teaspoon paprika
2 bay leaves
2 cups cooked rice
1/2 cup reduced-sodium vegetable broth
1/4 cup chopped fresh parsley leaves
Salt and freshly ground black pepper
Heat oil in a large paella pan or skillet over medium-high heat.
Add soy sausage and garlic and cook 2 minutes. Add artichokes, squash, zucchini, carrots, asparagus, peas, tomatoes, saffron, paprika, and bay leaves, bring to a simmer and cook 5 minutes. Add rice and broth and cook for 5 minutes, until liquid is absorbed. Remove from heat, remove bay leaves and stir in parsley. Season, to taste, with salt and black pepper.

Mushroom Risotto
300g mushrooms chopped
2 cups rice
1ltr vegetable stock
1 cup parmesan cheese, shaved

Lightly fry Mushrooms in a non stick pan. Add rice stir until combines. Put stock in another pan and boil. Stir 2/3 cup stock into rice. Stir until absorbed. Continue adding stock in small quantities, stirring regularly, until gone. When this process is finished, add the cheese and season.

Rather than recipes, I'll give you categories.

1 Have fun with soups. You can check out your local farmer's market for what's fresh and seasonal, and you can also get older wilted veggies at the supermarket for cheap. get creative - choose a grain, a bean or legume, a broth flavor, some herbs and some veggies. The combinations are literally endless, from minestrone to potato and cheddar to lentil and rice and more. Add a nice bread on the side and you've got a filling, healthy, delicious meal.

2 Welcome to the wonderful world of beans! You can do so much with beans, such as baked beans, bean soup, bean loaf, hummus (mmm, hummus! with cucumbers and pita wedges to dip in it!), bean and grain casseroles, etc. The variety is just limitless.

3) Explore ethnic cuisine. Especially Indian and Mexican, but Asian as well. Foods like refried beans, tofu, miso, lentils and dhal will become staples that you create with, just as you did with more conventional cooking.

4 I find that if I don't try to recreate a meat meal (I avoid meat substitute-starch-and-two-vegetables-typ... meals) I get better results. A nice vegetarian menu for two usually includes three or four dishes, some hot and some cold, some crunchy and some soft, etc. Examples might be baked potatoes, broccoli topping, a vegetable soup and carrot sticks and cucumber sticks with ranch dip. Or zucchinis stuffed with lentils and rice, cole slaw, and apple crisp with ice cream. Butternut squash soup, cornbread and vegetarian chili (use lentils instead of ground beef).

Try thinking outside the box. Vegetarians aren't destined to eat nothing but canned spinach and salad greens, despite the stereotype. Just because you don't eat meat doesn't mean you still can't have yummy foods! Chili! Miso soup! Raamen! Veggie stir fry! I LOVE vegetarian lasagna. "Milton's" makes some delicious frozen veggie lasagna that you can just sick in the oven, and POOF! It's done! If you're a lazy cook (like I am, obviously) you'd probably enjoy some of the food Amy's (an organic food vegetarian brand) has to offer. I like their lentil soup, enchiladas, everything. if you shop at your lcal co-op (a.k.a. THE HIPPIE STORE) you're going to find a lot more vegetarian options than you would if you shop at the regular grocery store. Have fun! Be creative! Try new things! If you love to cook, well, thatjust makes everything easier. Adjust your favorite recipes.
I'm sorry I couldn't be more of a help, since obviously I'm no chef and I have no recipes to offer, but I hpe you'll consider the things I shared with you.

Stir-fried vegetables with rice
Bean burritos and cheese quesadillas
