In the UK I am noticing that more cheeses seem to be vegetarian these days than non-vegetarian. The use of rennet appears to be much less than about 10 years ago. Not sure why, but this is a good thing, as I had a nice vegetarian cheeseboard this Christmas!

Yes. Fine cheeses contain rennet. Vegan cheese does not. That is why the vegetarian/vegan cheese taste like, melt like and are crap. Anyone who says this "stuff" tastes good has palate as refined as a pig.
