Sick of been a veggie, but could never eat an animal of any sort! any ideas of what to eat ?!
Answers: I am a very serious veggie totally against animal cruelty in any way, have been for about seven years now,thing is i am feed up eating the same stuff over and over, mostly procesed food, pasta, quorm, and veg, i just cant think of any thing differant to cook,plus the thought of going to all the bother for one is a pain, dont get me wrong i could never go back to eating meat dont even like having it in the house, but with a family to look after its hard not too. so has any one any ideas of quick veggie food that is not going to make me put on any more weight! thanks
I recommend that you get hold of The Vegetarian Student Cookbook by Hamlyn. It's not just for students, but has unfussy, uncomplicated, inexpensive recipes of all sorts. And they are mostly delicious!
I think it's all about getting into the mindset of eating as a vegetarian. If you eat like a meat-eater but cut out the meat then you'll be bored, but there are loads of wonderful veggie meals. The book I have recommended contains soups, bakes, casseroles, pizzas and all sorts of recipes designed for feeding meat eaters who aren't used to veggie food.

There are so many vegetarian cook books out there, the choice is endless. I would recommend The Accidental Vegetarian by Simon Rimmer which has some great recipes in it. But really, there is as much variety in vegetarian cooking as there is in meat eating. You don't mention potatoes, rice or lentils, there are so many vegetables that you can try, risottos are very easy, casseroles, anything that you would cook with meat in it can be adapted to a vegetarian diet.
Well if you won't eat meat or fish , it does sort of reduce choice and variety !!
Although I could never be a vegetarian myself I do respect those who prefer to do this and my suggestion to you is to get a decent vegetarian cook book . I also know the problems of cooking for one , but if you prepare in advance you can freeze . That would allow you a wider choice with less of the hassle of preparing a meal for one .
Try tofu It has no cholesterol and can be used in many dishes!
BUT
There are different types of tofu and you need to prepare it properly or it will taste yucky but if you can follow instructions and google it then your'll be fine!
Get a Wok. Stir fries with rice/pasta are good eats.
You need to go to a bookstore and stock up on some vegetarian cookbooks. You can't do it by yourself. You need some recipies to refer to.

Just Google some veggie recipies on the internet! There's loads out there.
Perhaps you could eat fish even if you don't want to eat meat. Fish is a useful source of protein, there's lots of different varieties and it's tasty.

Could try being a vegan
Always have the following in your kitchen:
A wok and oil
Salt, pepper, soy sauce, chilli sauce, garlic, mushrooms, spring onions , and any long shelf-life sauce that takes your fancy.
Always stir fry veg in a very hot wok, with as little oil as possible.
Now, I'm NOT veggie, as I love meat too much, but that doesn't make me incapable of appreciating vegetarian cooking.

If neither satisfies you ,you still have two choices, Eat or not eat.

get a veggie cook book borders has got tons! There you will find 100s of varieties to choose from.
Get yourself a really good Indian cookbook not one of those ones by so called Indian chefs but a really good ethnic Indian one. They have some fantastic vegetarian food, after all half a billion vegetarians cant be wrong can they??
Start with typing Indian Cuisine on Wikipedia and go from there.

I eat veggies now because the meds that I am on make me sick when I eat meat.
I have found that being creative with spices helps alot.
I also juice alot because I have problems with just plain eating and being able to keep the food down - so get the vitamins and nutrition that I need from such.
You also didn't say if you used any type of dairy - which would add to your choices and variety.
I have found that my slow cooker has become a really good friend to me lately - as I buy the cookbooks that they have at the stores and it really isn't all that hard to change them to suit my dietary limitations. You may want to give that a try.
My problem is that I keep dropping weight - and now down to a size 8/6. Large part of it is due to the meds that I take - but can't help but to think that the diet has something to do with it as well.

Congratulations for your ideas about animal cruelty and for being a vegetarian. You can be pround of you about that. Its not an easy way, not because its not easy to cook and to eat delicious vegetarians meal, but because of the "eyes" of others, and because of all criticisms we usually receive day after day.
You got plenty of good idea already in the answers. So look at them. Coocking is a infinity of possibilities and being vegetarian dont reduce the possibilities, because in a all life, you will never have the time to test everything.

Quick meals: M&S aubergine parmigiana (with meat substitute slices you can buy from Holland and Barratt on the side).
Chilli con carne, spaghetti bolognese or cottage pie made with Quorn mince.
Baked potato with a range of veggie fillings, eg beans, cottage cheese, veggie meat slices.
Quorn sausages with mashed potato, gravy and veg.
Linda McCartney deep filled country pie with chips and a glass of cider.
Linda McCartney veggie burgers served with Quorn bacon rashers and cheese in a bun with chips and salad.
You could do stuffed veg like butternut squash that you put feta cheese and pine nuts in,toms or mushrooms with savoury rice,peas,onions,peppers etc.
Filo pastry layers with feta and spinach mixture in between them.Lot's of types of risotto like mushroom,carrot and courgette etc
Vegetable pie,soups like sweet pot,ginger,carroty and orange.
Nachos with cheese,sour cream,salsa and you could make your own veg ch
Nice salads like goat cheese,walnut,beetroot,carrot and some green leaves.
Have a look on google as well and you will get find lots of nice stuff.
there are many kinds of soy based foods made to look and taste like meats. but i guess you're just too prissy to try any of this crap.
there is always roadkill, perhaps you have participated in this alternate food source when operating your car.

You need to try new herbs and flavors and flavorings.
Instead of plain steamed vegetables try this.
Get some vegetables, andy kind will work really, but i like green beans, sugar snap peas, or broccoli
minced fresh ginger
minced fresh garlic
soy sauce
Saute the ginger and garlic in some olive oil, add the green beans and saute a while but not untill they're mushy, add the soy sauce and let it reduce intill its like a thickish sauce.
Different flavorings, herbs, spices can make your food a lot less boring, you should try wines too, and its ok for kids to eat foods cooked with wine because the alcohol cooks out.
I'm not a vegetarian, but alot of my favorite meals have no animal products in them.
You should just buy some vegetarian cookbooks that are simple to use. I would also suggest more ethnic recipes as well. It can get boring eating the same thing all the time. Jazz it up. What about making vegetarian enchiladas? Or roasted vegetable fajitas? Pita sandwiches? Homemade pizzas topped with your favorite toppings? Salisbury "steaks" with smashed potatoes and a green salad? Homemade minestrone soup with a crusty bread on the side? All these things are easy to make and don't take a lot of time to do so. Plus, it's easy to make vegetarian versions for you, and omni versions for your family as well! It doesn't have to be a hard chore -- just be more creative. I'm positive once you start eating something new you won't be bored anymore! There's some pretty good recipes on www.allrecipes.com, too. Look in the vegetarian section. :-)

Quinwoa! I love quinwoa. You can find it at stores like Fred Meyer and your local Co Op. Try making some vegetarian soups. Buy a vegetarian cook book. You don't have to buy processed food! Cook something.
Any dish you make with meat, you can pretty much leave out the meat and have a vegetarian version. Lasagne is a perfect example as is chili. Both are pretty quick and delicious. I go to Subway once in a while and get a meatball sub without the meatballs- basically a veggie sub with marinara. It has all the same tastes I used to love without the meat. I still have pizza and garlic fingers- very easy to leave the meat out there. Oven cooked fries with vegetarian gravy. Old fashioned stuffing with potatoes and veggies, brushetta or focaccia bread with pasta, cream cheese and marshmallow dip with fruit. With portion control nothing is going to make you gain weight, and you have to add some yumminess to your life or what's the point?
