Why are yellow bell peppers more expensive than the green ones?!
Even Jalapenos will change colour to red if left to ripen fully on the vine, the coloured ones came into prominance around the late 1980's, and we used them on very special occasions, and now they are just available.
Answers: Well as a former chef I can say all the people so far are all very wrong, yellow, orange, red, purple, white and black are hybrids and are grown in the hydroponic way, and as stated they are more labour intensive the regular green peppers are field grown, and for some reds you can get them from green by putting them in a dark place, there are specialty red ones like the Sheppard variety that are field grown, and paprika ones in Hungary are just that ripened on the vine.

A yellow bell pepper is a mature green bell pepper. As bell peppers age, the flavor becomes sweeter and milder. Since they are on the vine longer they cost more to harvest and have a shorter shelf life.

Peppers are meant to grow green so when new colors are hybrid plants, the process is more expensive. However, I do not agree that a green pepper can cost 99 cents while red or yellow or orange peppers should be 3.99 a pound! That is just highway robbery!
They are priced SO high since forever..!

and if not the store claims the loss on their proffit for taxes..
Because they are ripe and ripe veggies don't last nearly as long on the shelf. Green ones don't necessarily have to be ripe.
That's interesting, here in the UK all the major supermarkets that I use charge the same price.
Sometimes large corporations just charge what they can get away with. If consumers are used to a higher price for one thing over another they will continue to charge extra, just because they can!
