I assume you are cooking this in soup like a classic wonton.

You can fill it with tofu and scallions (and egg if your diet permits).

Tofu and scallions are a classic dumpling filling so it will be somewhat authentic. Take about a cup of the firmest tofu you can find, chop and saute with two tablespoons of soy sauce, a pinch of salt and as much black pepper ( a lot can be nice) as you like. Throw in some garlic first for good flavor. Saute for about 15 minutes till the water has evaporated (it will be slightly wet still). throw in minced green onion (scallion), about 1 tbsp and cook for another 3 minutes. Let cool, drain and fill your wontons. Taste the filling--you want it to be a bit saltier than you are comfortable with, because the salt will drain out into the soup. Adjust saltiness of the soup before cooking accordingly.

IN many chineese restraunts I see won-tons stuffed with nothing but cream Cheese (if you still eat cheese) Even if it sounds strange to you, try it, it's really delicious.
