Answers: I'm a big fan of 'em because its cheap, filling, and gives you a lot of energy for the day.....but I wanna try some new varieties. And If you have a killer recipe and would like to share.....I'll give it a whirl.....

Im kinda partial to The Virgin Islands. The locals make and amazing red beans and rice with coconut. They sell it on the corners with fried chicken and fried bread...Its soo good....
Ingredients:
1? cups dried red kidney beans
1 clove garlic, minced
4 cups water
Salt, to taste
? fresh coconut
2 cups boiling water
Black pepper, to taste
2 green onions, chopped
1 teaspoon fresh thyme leaves (or ? tsp dried)
1 fresh hot pepper
2 cups uncooked rice
Method:
Combine beans, garlic, water and salt in a medium-sized saucepan. Cook, covered, over moderate heat until beans are tender or about 2 hours.
Cut coconut meat into small pieces and place in a blender. Grate as fine as possible. Pour boiling water over liquefied coconut and let stand for about 30 minutes. Run coconut milk through a fine mesh strainer to separate out coconut solids.
Add the coconut milk, black pepper, green onions, thyme and whole hot pepper to the cooked beans. bring back to a boil, then remove the hot pepper. Add rice and stir. return mixture to a boil, cover, reduce the heat and simmer for about 30 minutes or until all the liquid has been absorbed.

Curried Rice & Green Beans
Yield: Makes 6 servingsIngredients: 2teaspoons vegetable oil
2cups sliced mushrooms
1clove garlic, minced
1/2teaspoon curry powder
1/4teaspoon cumin seed (optional)
1cup fat-free reduced-sodium chicken broth
1cup fresh sliced green beans or frozen cut green beans
1/2cup uncooked long-grain white rice
4slices Canadian bacon, cut into short thin strips
1/4teaspoon black pepper
Preparation: 1.Heat oil in medium saucepan. Add mushrooms and garlic; cook and stir over medium-low heat about 5 minutes. Add curry powder and cumin seed, if desired; cook and stir 30 seconds.
2.Add chicken broth; bring to a boil. Stir in green beans and rice. Reduce heat to low. Cover and simmer about 18 minutes or until rice is tender and liquid is absorbed.
3.Stir in Canadian bacon and pepper. Heat just until bacon is hot.

Zatarains Red Beans and Rice is very good if you want a quick beans and rice dinner.
The greek/cypriot cuisine has lots of meat free dishes, as their custom is to only eat meat 2 to 3 times a week, they use lots a various beans,rice and lentils, and a combination of both, used in often a tomato base, i am sure if you search the net you will find great recipes, all mine are in my head, use things, like Onion, garlic, oregano, mint, lemon juice, corriander to enhance the flavours. Good on you for eating more beans, keeps you regular, and full of energy. I like to make a nice bean salad, get a tin of 4 bean mix, drain off the fluid, finely chop some onion into it, also finely chop some corriander leaves, a little salt, the some olive oil, and lemon juice, yum, you will love it, good luck.

By far, it's Mexican. Indian food smells awful. Anyway, here's my favorite Mexican recipe, it's vegan friendly.
Frijoles Pintos y Arroz
For the beans
1 can of pinto beans.
1 tablespoons of garlic powder
2 tablespoons of chili powder
1 half of a small onion
1 teaspoon of onion powder
For the rice
1 cup of rice
2 tablespoons of chili powder
Open up the can of pinto beans into a bowl. Add the seasonings into the bowl and mix.
Chop the onions and place them in the pinto beans. Mix.
I use a can of pinto beans instead of boiling the pintos as because it's quicker, but if you don't have canned pinto beans in your area, you can buy a pack of pintos and boil them as you would boil the rice below.
You boil the rice for 20 minutes.
Drain the rice.
Put the rice into a bowl. Mix the seasonings together with the rice.
Pour the seasoned beans over the rice in a bowl and eat away!
