www.allrecipes.com is a good one! It has thousands of recipes, a star/comment system (so you can see how the other average joe made out with it!), and usually the recipies are pretty easy to find and perform. Never anything too fancy (it's users who post them!).

Just go to the top and type in "vegetarian" in the search bar, or browse through the fruits/veggies section, I'm sure you'll find lots of new meal ideas :)

"Vegan with a Vengeance" and "Veganimicon" are two great vegan cookbooks. You'll probably find a ton of stuff you can enjoy as a vegetarian - my meat eating boyfriend has happily eaten everything I've made from both. The companion website is www.theppk.com and it has links to lots of food blogs where you can find great recipes.

www.allrecipes.com has a huuuuge number of vegetarian recipes as well.

I'm a big fat of epicurious.com which has recipes from several cooking magazines and have been thoroughly tested and reviewed.

recipezaar has some fairly decent recipes.

In the interest of widening culinary borders, try mykoreankitchen.com. Many recipes are pescatarian, substitute veggie broth cubes where it calls for fish broth and those are yummy too. Most side dishes are vegetarian.
