How's this sound for dinner (nutrition wise)?!


Question: A mixture of organic tomato sauce/paste, lightly sauteed chinese eggplant, and organic kidney beans over steamed brown rice.

Sound decent to you guys? No actual fruit included because I've had two bananas, an apricot and two and a half (shared half with my guinea pigs =) ) apples today already. Drinking water. ^^

Can you guys think of any way to make it healthier?

Sounds good to me.

It all depends on portion size, how much oil you used to sautee (you said light so I'm assuming only a bit)... and of course, the other poster is right - it's not just one meal but your diet overall that makes or breaks it.

Edit: Sounds okay, but don't be scared of fat and calories. This sounds like a really light supper to me :) I like to eat, man. I'd probably be hungry in 2 hours after eating that, but that's just me. I'm active though...

You shouldn't look at one meal, you should look at your overall daily diet. I mean, it doesn't look terribly unhealthy, but it all depends.

That's great. It's got vegetables and protein from the beans and fiber from the brown rice. A very balanced meal. Man, it sounds good with the cheese product on it!
