Does anyone have a good vegan recipe that doesn't use tofu?!

You know, you don't have to crazy over this. So many simple things are Vegan. What about a large garden salad [& vinegarette] and some meatless spaghetti? Or Pesto without the cheese? Meatless chili? Veggie burgers with mounds of lettuce, red onion, ripe tomato and mustard?

If you want something a bit more complex and have access to seitan you could try making fried "chicken" with potatoes and corn on the cob [serve with vegan margarine like Smart Balance Lite]

There is so much out there.

Try texturized vegetable protein (TVP). You can buy it at almost any co-op or health food store, or at the regular grocery in the health food section. It's flavorless, so it takes on the flavor of whatever you cook with it and has the consistency of ground beef. I use it as a substitute for ground beef all the time in chili, spaghetti, and lasagna.

I used to have a vegan roommate and I made this yummy noodle thing with udon noodles, scallions, toasted cashews, garlic, ginger, and seitan. If you buy seitan (it's wheat gluten cut like meat, it's good), buy it teriyaki-style. it comes in a container similar to the tofu containers, it's marinated.

How to make:
- chop 2 cloves garlic, chop the scallions, anything else you want in there veggie-wise
- put the cashews on a tray, mixed with a little oil, and put them in the oven on broil for a VERY SHORT TIME (the broiler will burn them!)
- cut seitan into bite-sized chunks and set aside, keeping the liquid separate
- boil a pot of water for the udon, put the udon in when the water boils
- take about 1/4 cup of seitan liquid and stir in some (2 tsp?) arrowroot or cornstarch, make sure it's dissolved
- use olive oil to pan-fry the garlic and seitan, adding the scallions later in the frying process. reduce heat to low until the udon is done. then throw the udon in. use a little oil and/or liquid to keep everything from sticking.

Stir fry everything together, adding the cornstarch mix at the end, and add a little more liquid just until you have a nice sauce. Taste and see if you need some soy sauce or salt. You can also grate in a little ginger (has to be fresh or it will be gross). Before you serve, throw in the cashews.

You have to make Seitan O' Greatness! You can use it in place of meat in almost anything! (My fav is in a stir-fry). You can make it the night before, and enjoy!

I'd be thinking about something like a vegetable curry with rice, with a bit of side salad, and lentil dhal if you're really ambitious. Or a rice and vegetable pilaf type thing with sweet peppers, green peas, chick peas (you can get these in tins), maybe some tomatoes and sweetcorn, or similar vegetables with couscous.
If you like making soup, a slightly spicy vegetable soup with chick peas or lentils or some type of beans added served with some nice bread always goes down well in the cold weather. I make a sort of tajine I bought the spices for, but I think they're just a pinch of chilli, cumin and coriander.
Or if you want something really simple there's always jacket potato with some salad, or just simple pasta with maybe broccoli and a nice tomato sauce.
Just some ideas, I tend to improvise and don't really follow recipes, but there should be a lot of recipes on the web if you decide what you're looking for.

Make your vegan friend tofu and have something else yourself.
