Black Beans & Rice Cuban Style
Ingredients (use vegan versions):
2 16 oz cans S & W Black Beans Cuban Style
2 cups uncooked long grain rice
2 cups water
1 large onion thinly chopped
2 cloves minced garlic
2 tablespoon olive oil
1/2 teasp oregano
1/2 teasp cummin
1 Bay leave
salt to taste
Directions:
Drain black beans and combine liquid with water to make a total of 2 1/2 cups, set aside. Sautee onions in olive oil, add garlic, oregano and cummin and continue sauteeing for about 1 minute. In a 2 quart pot, combine rice, liquid and sauteed onions, add bay leave and salt to taste add beans. Bring to boil. Reduce heat to low and cook for approximately 20 minutes or until rice is tender. Serve with your favorite green salad and vegan french bread. Buen apetito!
Serves: 4 to 6
Preparation time: 20 min.

1 - Medium Shallot, diced fine
1 - Clove Garlic, crushed
1 - Medium Eggplant peeled and cut in 1 inch cubes
2 - Medium Zucchini cut in 1 inch slices
2 - Medium Yellow Squash cut in 1 inch slices
1 - Small Poblano Pepper cut in 1/2 inch cubes
1/2 tsp - Kosher Salt
1/4 tsp - Coarse Ground Black Pepper
Pinch - Crushed Red Pepper
1/2 tsp - Dried Thyme
1/2 tsp - Dried Basil
1 - 14 oz Can Stewed Tomatoes1/4 cup vegetable stock
Method
1. Heat Large pot on medium-high heat.
2. Add oil, garlic and shallot. Stir. (do not brown)
3. Add eggplant, squashes and pepper. Saute 4-5 minutes, stirring occassionally.
4. Add salt, pepper, crushed red pepper and herbs. Stir.
5. Add stock and stewed tomatoes. Cover and simmer on medium-low heat for 10 minutes stirring occcasionally.
6. Uncover and simmer on low heat for another 5-10 minutes to reduce sauce slightly

How about something like an aubergine bake?
Put layers of fried aubergine, fennel, onion etc. in a dish with pasta and then a tomato sauce kind of thing- with chopped tomatoes, soya sauce, chilli, bit of garlic, then finish with a layer of grated cheese and put in the oven for about 30 mins+.
To make top look nice, put under grill at the end

you are not asking a question, you are expressing an incomplete thought.
make it potluck and have the two veggies bring dishes that they and the whole group can enjoy.
An aside, I have seen many omnis accomodating veggies in similar situations. But outside of family relationships, i have yet to hear a veggie even try to accomodate an omni ie: serve meat or meat products. one way street? special treatment?
Vegetarian Paella? Or you can have pastries such as cheese and onion bake? Here's an idea:
Cook some vegtables mainly use carrots, brocolli, peppers, potato, aburgine, etc like a curry and make some pastries using flour (they gotta be small; you know like cheese and onion pastry, the wrap) and put these vegtables inside the pastries, brush them with oil and cook them in the oven. When they are golden, serve them. You can use those oven trays which are designed for cakes to cook them on. That can be your starter.
For meal, you can have roast drumsticks with gravy and roast potato and vegtables. For those who are non-veg. For vegetarians you can serve them bombay potatoes with tortilla or nun bread. You can buy bombay potato mix in shops and follow the instructions written there. You can spread some gravy on there bombay potatoes too.
For desert, why not have choclate brownie with castard?

That's an invalid analogy.Omnis can certainly eat vegetarian food, but veggies cannot eat omni food. Omnis don't have any moral or ethical beliefs against veggie food.

Stuffed peppers with rice, mushrom and pine nuts...everyone I make this for loves this meat eaters included. the good thing about this is that it can be served on its own or with chicken.

Second link is the recipe and she served this with a salad. Obviously this wouldn't be enough to fill people up, but you could have a starter (maybe an antipasti type thing with a selection of meats/bruschetta etc - the vegetarians wouldn't eat the meat obviously, but not so sure about mixing Italian and French cuisine i.e. the main course), then maybe a soup course, the gougere and then dessert.
