Well, so that you don't increase your workload too much, you can perhaps make a sauce that would suit all, like a veggie onion gravy or a creamy mushroom sauce.
Then you can serve him the tats and veg with something else.
For the something else, the best thing to do would be some kind of protein that would go with the veg so, I would suggest for example:
- smoked tofu (just cut it into thin slices lengthways and sautée with a drop of olive or sesame oil until golden. Sprinkle some sesame seeds over the top when done and that's it!)
- Quorn Fillet (You can buy these in the supermarket. Try the black pepper and lemon one. You only need to heat it up in the oven or in a pan and it tastes nice without you having to do anything to it)
- Veggie sausages (You can buy some really tasty ones which are made with things like leek and cheese or red pepper. You will probably find you like them as well if there are any leftovers!)

Although there are about a million other things you could make, these are probably the more sensible options considering he is the only veggie in the group. They avoid you having to actually cook two meals.

Have a great time!

A packet of crisps for the fussy eater.

Quorn it's lovely

A ticket for the cinema and tell him to come back when dinner is over and you's are stuffed.

Depends on their tastes!

Here are a couple of links with some really yummy veggie meals:

Good Luck, hope it goes well!

how about a ratoulie or use quorn instead its a kind of fake meat

Some vegetarians eat fish - you could ask your friend if he does and then maybe you could make an entire meal of some kind of fish dish? That way he won't seem like the odd one out if you're all having the same dish.

nut roast or a quorn veggie lasagne and salad with pots

Ignoring the idiots who suggested you give him meat or fish, show that you respect his choice and make him something filling and tasty, but which isn't going to stress you out when cooking it! Google "vegetarian main dish" etc, or I can recommend the Vegetarian Society website (www.vegsoc.org) for ideas. It's true there are some good "fake meats" out there, but you need to know if he is veggie for health or for ethical reasons. Most ethical vegetarians don't want to sit down to something that looks, tastes and smells like meat, even if it's fake. There are some great recipes on the net for nut roasts, which would go well with the potatoes and veg you're serving anyway. They're pretty easy to make and if you have some left over it wouldn't surprise me if the other guests fancy trying it too.

Bear in mind too that you will need to be careful of "hidden" non-veggie ingredients (gelatine, cochineal etc) which may be in desserts or potentially in any sauce you make.

Stuffed Mushrooms
Veggie Pasta Bake
Nut Roast
Veggie burgers/sausages

just look in the supermarket, there are alot of different dishes for veggies these days and most of the ready made ones are very good.

for your sauce for your steak why not do a nice mushroom/pepper sauce it goes beautifully with beef and your veggie guest may also like it. good look for your dinner party.

My girl friend is a strict veggie and I'm big into my meats, however last night she made the best pesto I've ever tasted. Quite a feat as I taught her how to make it and now she makes her own recipe.
Dry roast your pine nuts, till lightly brown
Chop your fresh basil (the more the merrier)
Mix with a generous splash of olive oil
Grate in plenty of Mexicana cheese
Don't forget lots of finely chopped garlick
Mix all together and enjoy.
The meaties will want it too, have a great party.

Nut Roast, or Pepper stuffed with mushrooms (oooh so goood) and if he doesn't mind eating 'pretend' meat, why not a vegetarian sheperds pie?

Ahh...I am so hungry =[

Also: Smoothies, Fruits and Multi-grain Breads, Nuts and Tofu/Soya/Quorn! Seaweed?

Just a few ideas flying around =]

My sister is a veggie....Give them a patsa with veg inti...or give them a pizza...or maybe give them a veggie burger,....and everyone else can have a normal burger...so they do'nt feel left out from what they eat...!

It's been my experience that veggies will cheat confronted with a wonderful dinner such as you will prepare. Find out if he's one of those odd "strict" vegetarians, or if he's a more sensible and civilized flexitarian vegetarian that will honor the social cicrcumstances.

If he is a no-meat poofer, then suggest to your friend that he come after dinner.

Pasta.

When I cater for veggie friends, I never give them something different to rest of us. I feel that smacks of them being a nuisance and can make them feel unwelcome. I make a veggie meal for everybody.
A lot of the meat eaters learn that they can have a good dinner and not miss meat. Everything on the table is available for everybody to pick and share and taste. Isn't that what dinner parties are for?.
There are so many wonderful vegetarian recipes out there that you could use. I would recommend the following for to find something suitable.
Robert Carrier, Prue Leith's Vegetarian Bible and good old Delia.
Wow your friends with a sumptuous meal and not a dead animal anywhere.

A big slab of Veal.
