Any good vegetarian recipes for the whole family?!

falafel on pita with tahini and tomato-cucmber relish

macaroni and cheese
2/3 cups (about 7 oz.) dry small elbow macaroni, cooked and drained
2 tablespoons cornstarch
1 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon ground black pepper
1 cup Milk
1 cup water
2 tablespoons butter or margarine
2 cups (8 oz.) shredded sharp cheddar cheese, divided


Directions:
PREHEAT oven to 375° F. Grease 2-quart casserole dish.

COMBINE cornstarch, salt, mustard and pepper in medium saucepan. Stir in milk, water, and butter. Cook over medium-heat, stirring constantly, until mixture comes to a boil. Boil for 1 minute. Remove from heat. Stir in 1? cups cheese until melted. Add macaroni; mix well. Pour into prepared casserole dish. Top with remaining cheese.

BAKE for 20 to 25 minutes or until cheese is melted and light brown.



Tortellini Stir Fry
1 package (9 ounces) BUITONI Refrigerated Three Cheese Tortellini, prepared according to package directions
1 tablespoon vegetable oil
1 package (16 ounces) loose-pack frozen stir-fry vegetables
1/3 cup prepared peanut- or garlic-flavored stir-fry sauce
2 tablespoons water
1/8 teaspoon crushed red pepper (optional)
2 tablespoons chopped unsalted cashews or peanuts


Directions:
HEAT oil in large, nonstick skillet over medium-high heat. Add vegetables; cook, stirring occasionally, for 7 to 8 minutes or until crisp-tender.

STIR in pasta, stir-fry sauce, water and crushed red pepper; cook for 1 to 2 minutes or until mixture is heated through. Sprinkle with nuts just before serving.

I like cheese and potato pie with hint of onion and serves with tin tomatoes.

I always find a good old pan of Nachos a great treat! Cheese, chips, tomatoes, sour cream, black olives, peppers, onions, guacamole, salsa, and/or whatever else you want, its quick easy, and delicious, plus if rest of family is not vegetarian, still seems like a traditional meal!

(note, not a Vegan dish though)

Most of these recipes have cheese in them, vegetarians only eat cheese without the animal enzyme Rennet. Rennet is an enzyme culture from a calf's stomach. Australia now produce some lovely cheeses that do not contain Rennet, check the labels before buying.
