Different vegetarian recipes?!
I just wanted to know some different recipes I could make for us. Being a veggie for 15years I've come up with a few.
I just want some new ideas to investigate with.
They have to be vegetarian- no fish or gelatin. Thanks for your time.
Answers: I'm about to move into a flat with 3 others and weirdly all 3 of the people I'll be living with are vegetarians too- Is great!

Here are a couple of my favourite recipes:
Sweet Potato Burritos
Serves 6
Ingredients
3 teaspoons vegetable oil
1 onion, chopped
4 cloves garlic, crushed
2 small canned kidney beans, drained
2 cups water
3 tablespoons chilli powder
2 teaspoons ground cumin
4 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
3 tablespoons soy sauce
1 lb cooked and mashed sweet potatoes
12 (10 inch) flour tortillas, warmed
8 ounces shredded Cheddar cheese
Method
1. Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a medium skillet, and saute onion and garlic in until soft.
2. Stir in beans, and mash. Gradually stir in water and heat until warm.
3. Remove from heat, and stir in the chilli powder, cumin, mustard, cayenne pepper and soy sauce.
4. Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas.
5. Top with cheese. Fold up tortillas burrito style.
6. Bake for 12 minutes in the preheated oven, and serve.

Mushroom and Lemon Spaghetti
Serves 4
Ingredients
400g dried spaghetti
2 tbsp olive oil
250g white mushrooms, sliced
200g pack Philadelphia Light with Garlic and Herbs
Finely grated zest of 1 small lemon
Handful chopped fresh curly parsley
Method
1. Cook the pasta in boiling, salted water according to pack instructions. Drain and return to the pan.
2. Meanwhile, heat the oil in a frying pan over a medium-high heat. Add the mushrooms and cook, stirring, for 3-4 minutes. Stir in the cheese until melted, then bring to a simmer. Season to taste with salt and pepper and stir in the lemon zest.
3. Add the sauce to the spaghetti. Toss together, divide between bowls and sprinkle with the parsley to serve.

Mushroom, Tomato and Egg Burger
Serves 2
Ingredients
2 large flat mushrooms
2 thick slices of beef tomato
2 tbsp garlic butter
2 eggs
2 burger buns
A few baby spinach leaves
Method
1. Destalk mushrooms and put on a grill pan or baking tray, along with tomato slices. Dot everything with a little garlic butter (about a tablespoon) and pop under a medium-hot grill for 5 minutes, until tender.
2. Meanwhile, heat a small knob of garlic butter in a frying pan. Crack in eggs and cook for a few minutes to set the white.
3. Toast burger buns. Top each bottom half with a few baby spinach leaves, a grilled mushroom, a tomato slice and a fried egg. Sandwich with the bun tops and serve with oven-baked chips.
Well......here are some:
~ salad w. meatless chicken strips from Morning star farms (my mom makes this one and we like it)
~tofu scramble for breakfast...if you don't want egg

My 17 year old daughter turned veggie 10 years ago so I have become used to feeding 3 meat-eaters and one vegetarian, so you're in an easier situation!
I tend to make exactly the same for her as we eat, but using a veggie substitute.
If we have chicken curry, she has Quorn chicken-style pieces curry.
If we have spag bol, she has Quorn mince spag bol.
I pretty much adapt any chicken or mince recipe for her.
Well, I don't know what you cook already but I use quorn for shepherds pie, lasagne, quorn 'beef' and onion pie or 'chicken' and mushroom pie. curry. veggie sausages and mash
vegetable stew with dumplings using the veggie suet.
pizza, paella,
oh the list is endless!!!
I don't know if you have tried some of these things before but some of the vegetarian recepies I like to make for myself are: burritos with kidney beans, lettuce, cheese, salsa, etc. Baked potatoes served on top of stir-fried broccoli or other vegetables with cheese, sour cream, and other baked potatoe toppings. Another thing I like to eat is green beans and tomatoes (from a can, but fresh is also good) served on top of your favorite pasta and sauce. If you want some thing quick, frozen, and easy, Boca veggie burgers are also a great idea- just stick them in the microwave or on a grill and add a bun! Homemade veggie pizza is another good idea, and with a little experimenting you will find a lot of good vegetarian recipes out there that you enjoy :)

This is the site of The Vegetarian Society of the UK...it's the oldest veg society in the world, but that doesn't mean that the recipes are old fashioned...and you can be sure that there are no fish recipes or any hidden ingredients...have fun trying them out!
I really love roasted butternut squash with sage leaves and roasted chestnuts (it's a Sainsbury's recipe by Jamie Oliver so might be on their website). Chop up and roast basically. I also add other things to the roast - potatoes, sweet potatoes, leeks and tomatoes. Really you can do any combination and it's great - really tasty. My meat eating hubbie is happy to have this dish as you can make it really hearty. Enjoy!

i am a vegetarian too i make my own veggieburgers here is how you make them dice up very small your favourite veggies add soya mix with a little stock make them round and dip them into raw egg and cover them with breadcrumbs and then fry them

About scaling and conversions
INGREDIENTS
2 tablespoons olive oil
4 tomatoes, seeded and chopped
3 tablespoons chopped fresh basil leaves
2 cloves garlic, peeled and chopped
1/2 (8 ounce) package cream cheese, softened
1 (4 ounce) package herb and garlic feta, crumbled
1 (1 pound) loaf sourdough bread, thickly sliced
1 (8 ounce) package shredded mozzarella cheese
Heat the olive oil in a medium saucepan over medium heat. Mix in tomatoes, fresh basil leaves and garlic. Cook and stir until heated and slightly tender, about 5 minutes.
In a small bowl, blend cream cheese with herb and garlic feta.
In a toaster or an oven heated to 350 degrees F (175 degrees C), lightly toast the sourdough bread slices.
Spread toasted bread slices with the cream cheese blend. Top with tomato mixture. Sprinkle with desired amount of mozzarella cheese.
fragrant Sri lankan currry
vegetarian mince stew
Lentil Lasagne...
for the lasagne...
1 red onion
1 red pepper
2 cloves garlic
1 bag ready to eat spinach
2 x cans chopped tomatoes
200g red lentils
tsp veg bouillon powder/veg stock cube dissolved in a cup of water
chop onion and fry. add chopped pepper and crushed garlic. throw in lentils, chopped tomatoes, veg stock. simmer for about half an hour.
in the mean time make a cheese sauce - big knob of butter melted in pan. add approx same amount of flour to make a roux. add milk and stir until it's smooth. let it thicken and then add more milk. keep doing that until you think you'll have enough for the top of the lasagne. add in a BIG handful of grated cheese.
When your lentil mixture is ready stir in the bag of spinach, then make up the lasagne. pour the cheese sauce over the top. sprinkle grated cheese on it and shove it in the oven at around 180degrees for about 40 minutes or until it looks done.
This is a firm favourite in our house. hope you like it!
