Answers: i made vegan chow mein today, i cant beleive after replacing the meat with tiny chopped up tofu peices marinated in soy sauce that the meal would taste as good as the beef recipe,

I've made these pancakes for both vegans and non-vegans... everyone loves them!
Pumpkin Pie Pancakes
1 ? cups unbleached all-purpose flour
3 Tablespoons sugar
1 Tablespoon baking powder
? teaspoon salt
? teaspoon pumpkin pie spice
1 ? cups soy milk or other non-dairy milk
1/3 cup canned pumpkin
1 Tablespoon corn oil
1. In a large bowl, combine the flour, sugar, baking powder, salt, and pumpkin pie spice and set aside.
2. In a food processor or blender, combine the soy milk, canned pumpkin, and corn oil and process until well blended. Pour the wet ingredients into the dry ingredients, mixing with a few swift strokes until just combined.
3. Use a skillet to make pancakes as you would with regular pancake batter.
Brooklyn Pad Thai
1 pound rice noodles
FOR THE SAUCE:
6 tbs tamari (soy sauce)
6 tbs sugar
2 tbs tomato paste
2 tbs Asian hot Chile sauce or hot sauce
1/4 cup rice wine vinegar
3 tbs tamarind concentrate or lime juice
FOR THE PAD THAI:
6 tbs peanut oil
1 pound tofu, drained and pressed and cut into small triangles
1 med-size red onion, cut in half and thinly sliced
2 cloves garlic, minced
1 tbs finely minced lemon grass
2 cups bean sprouts
8 scallions, sliced into 1 1/2 inch lengths
2 small dried red chiles, crumbled
1/2 cup chopped roasted peanuts
1/4 cup chopped fresh cilantro
lime wedges for serving
Prepare the rice noodles according to the package directions.
Mix together the ingredients for the sauce.
Preheat a large nonstick skillet or wok over moderate-high heat. Pour 2 table-spoons of the peanut oil into the pan and heat, then quickly add the tofu. Stir-fry for 4-5 mins, until the tofu is crisp on the outside. Remove from pan and set aside.
Pour 2 tbs more of the peanut oil into the pan. Add half the red onion and stir-fry for 30 seconds. Add half the garlic and half the lemon grass, and stir-fry for 30 more seconds. Add half of the sauce and, when it starts to bubble (should bubble within a few seconds), add half the noodles. Cook for 2 minutes, stirring constantly, then add half the tofu, bean sprouts, scallions, chiles and peanuts. Stir for 30 more seconds. Transfer to two serving plates and garnish with cilantro and lime wedges. Repeat with remaining ingredients.

This sounds simple and plain but it's surprisingly delicious and super healthy, even people who don't like tofu or carrots would like this!
CARROT TOFU SCRAMBLE
1 pkg firm tofu (see below for prep instructions)
equal amount of carrots (to tofu), grated
1/3 cup soy sauce
2 tbsp vegetable oil
1 tsp sesame oil
sesame seeds, toasted
optional:
green onion
jalape?o
Remove tofu from package and wrap in paper towel. Place on flat surface and put something heavy on top and leave it to drain for 10 minutes. You may need to change the paper towel to get as much liquid out as possible. Once drained, grate tofu, either in food processor or by hand, or even mush it with a fork.
Heat vegetable oil and add grated carrots, tofu, green onions and jalape?o (is using) to pan. Fry for about 10 minutes until the carrots are soft and it smells delicious. Once it's almost ready to eat, add soy sauce. Be careful if you are using dark soy sauce...use less and add more if you need to. Add sesame oil right before serving and sprinkle with sesame seeds.
Serve over rice or orzo or couscous or quinoa or anything really, even plain it's awesome, and enjoy. It's great in tortilla wraps as well.
This recipe is great for freezing in little individual containers and bringing to work for lunch. It reheats very well.
I'm going to be very honest here...
I dont think vegan diet is necessarily a 'low-fat' diet. Even without dairy, meat, eggs, fish etc...
I know ill get thumbs down like cutemum..!
btw, what do you eat to replace the vitamins, omega and essential fats from fish??
