Depends on how finicky your kids are. Vegetarian chili always hits the spot, expecially in the winter. Curried vegetables over rice (if the kids eat them). Bulgur stuffed bell peppers (don't over-cook the peppers or they become gooshy [eewww]). Any pasta and bean combination, and red beans and rice. Grains and beans give lots of protein for growing kids, and good complex carbs to keep a body going.

It's hard to go wrong with vegetarian chili or lasagna, or maybe a good soup with nice crusty bread on the side.

My mom found my brother and me a vegetarian meatloaf! We ate it on New Years day with mashed potatoes and vegetables. There are plenty of fake meats that are very good; you just have to find the good ones. We've even found fake steak (which was very good).

On the other hand, you don't HAVE to have meat or a fake meat to make a good meal. Try making some black bean roll-ups or some sort of vegetarian burritos/tacos.

I like to do a meal in a bowl. This is one veggy dinner we all love. I steamed up my favorite veggies, carrots, potatoes, yellow squash, brocholi, zucchini, asapagas etc. I then saute'd up some onion and mushrooms in butter. I add the saute'ed veggies to the seamed veggies and mix in an 8 oz. pkg of cream cheese. Stir until it is melted and add soy sauce to taste.

It's not really filling enough for dinner, but I came up with something that might be a fun side dish for kids. You just take some boca ground burger, mix it up with some taco seasoning and a little bit of tomato sauce and throw it in the microwave for a minute or two. Then you take crescent roll dough (suprisingly vegan), and make little pockets of it stuffed with the ground burger mixture. Put them in the oven at 350 for about 7 minutes. Their yummy.

Another kid favorite would be tacos, just subbing boca or the like for beef.

quick chili
10 3/4 oz can campbell's tamato soup
10 3/4 oz can campbell's chili beans
1 clove of garlic, cut up
1 lg onion, cut up
milk,measured into tomato can
1/2 tsp. red wine vinegar
1 t. paprika
1 t. butter or crisco
salt and pepper to taste

in large pot, saute garlic and onions in butter or crisco for 5 minutes, add soup and milk, stir in. add beans,mix well
cook over medium flame for a half an hour. add wine vinegar,salt,pepper,paprika, cover,cook slowly over low flame for another 10 minutes
