There are many vegan dairy and meat substitutes that simplify cooking -- see http://www.vegcooking.com/guide-favs.asp for a list. I use these products a lot because I don't like cooking, and it's easy to pop a veggie burger into the microwave.

There are some pretty easy recipes out there. Some more time consuming than others, but these are a couple of my favorites:

Fried Tofu Sandwich:

1 14-16oz. block extra firm tofu, cut into 1/2 inch slices
2 Tbsp. flour
2 Tbsp. nutritional yeast
salt + pepper (to taste)
2 Tbsp. oil
marinade (soy sauce, sesame oil, garlic, ginger, etc.)
sandwich fixings (lettuce, tomato, onion, sprouts, vegan mayo, mustard, etc.)

-Drain and press most of the liquid out of the tofu and marinate for at least thirty minutes
-Heat oil in skillet on medium-high heat
-Mix flour, yeast, salt, pepper on a plate and dip the tofu slices into the mixture until coated; shake off any excess
-Place tofu slices on the skillet and fry until browned on one side then flip and brown on the other side
-Put browned tofu slices on paper towels to drain excess oil and place on some bread with sammich fixin's.


Mexican Enchilada Casserole:

12 Corn Tortillas
Large can (30 oz. or so) vegetarian refried beans
1 envelope vegan taco seasoning
2-3 cups black beans
2 cups enchilada sauce
1 cup salsa
assorted veggies (1 large onion, 1 large bell pepper, garlic, tomatoes, etc.)
sliced black olives

-If you are using veggies, saute them in a skillet with about 1 Tbsp. water until softened, about 3-6+ minutes.
-Grease a 9"x13" baking dish and layer 4 tortillas on the bottom (you can cut to fit them)
-Mix refried beans with taco seasoning and layer 1/2 of the mixture evenly on top of tortillas
-Layer 1/2 of sauteed veggies
-Layer 1/2 of black beans
-Place more tortillas on top and then layer like before adding a layer of salsa on top of black beans
-Layer final tortillas and pour enchilada sauce all over and sprinkle black olives over the top
-Bake, covered, at 375 deg. F for about 30 minutes or until heated through.

There is a recipe book, called "The Sunset Vegetarian Cookbook", that has many wonderful vegan and lacto-voa vegetarian recipes.

You can pick it up softcover and overpriced at most bookstores.

I really like the "Garden Fresh Minestrone", and "Black Bean Soup".

I also modified my regular chili recipe to eliminate the meat and include lots of fresh bell peppers, hot peppers and beans and spices.

The nice thing about these recipes is, that you can always add more of what you like.

I think this also has a vegan pizza recipe, where you use marinated artichoke hearts and zucchini slices, but not sure if that included cheese.
