At what point does a combination of ingredients become a "recipe"? Any OUTSTANDING veggie ones?!
I know there's carrot/cabbage "slaw" type salads.."3 bean" salads & such...
And you can roll such into tacos for variety- after that I'm sort of stuck-
Answers: In changing my diet to include more veggies & less meat, I've been chopping whatever fruit/leafy green/zucchini/celery etc. brought home from the store/farmer's market without too much regard as to what combination "works" better....

I am doing the same thing here. Trying to get more veggies into our diet, without sticking to stirfry's and salads. It's tough tho.
you got soups and stews also too.
i had an awesome recipe for artichokes. you prepare them as usual (remove the choke, cut off thorns, and pc of base), rub cut ends with lemon, stuff the leaves with a mixture of parmesan cheese, dried bread crumbs seasoned with italian seasoning. add white wine to the water, and cook (check cooking times in recipe book i forget).
it was the best way i ever had them.
i love celery stirfried, brings out a whole different flavor.
try to find some unusual veggies, like yukka root, that stuff is terrific boiled and mashed, or stirfried.
chili is a great way to add lots of veggies: tomatoes, corn, peppers, (red, green, jalepeno), mushrooms.
stew is a great way to do turnips, pototoes, carrots, celery and parshnips.
my hubby makes a 'swamp soup'. it's wonderful, u can use a small amount of beef, cooked in lots of white onions and green onions. then add some water, soya sauce to taste, and bok choy, or chinese cabbage (i like bok choy, holds up better), add celery, carrots, soup is very versitile and has a very delicious unique flavor.
if you have yams, or sweetpotatoes, use them to make stuffing/dressing instead of white ones. (bread, onions, salt pepper). mmm my fav stuffing
if you want to do a salad, try using the mesclum mix, it has a wide variety of leafy greens, some red lettuce and raddicho (kinda bitter, but nice). you can really play with this salad, by adding different toppings (parmesan, crutons, or asian noodles, ), or some grilled chicken.

My favorite vegetarian recipe is vegitarian chili. It can be made with Boca "meat", beans, veggies, etc. You can find many recipes online.
You can put mushroom, tomatoes, onions and ham ;-)
More than 1 ingredient makes it a recipe. Putting peanut butter on bread is a recipe.
