Cook old fashioned rolled oats according to package directions. During the last few minutes of cooking, stir in some frozen blueberries. The color is a little odd, but it is very yummy. It's especially nice if you drizzle a little real maple syrup on it.
For something heartier, consider making a veggie quiche on the weekend, then just heat up pieces all week long.
