What are some recipes that I can use Silken Tofu in?!
Answers: I don't want smoothie or dessert recipes.
SPINACH & TOFU RISOTTA
8 oz. tofu, drained
1 med. onion, chopped
1 clove garlic
2 tbsp. olive oil
1 (14 1/2 oz.) can Italian tomatoes, chopped
1 tsp. dried oregano
2 c. brown rice, cooked
1 (10 oz.) pkg. frozen spinach, thawed & drained
1/2 c. Swiss cheese, shredded
1 tbsp. sesame seeds, toasted
Preheat oven to 350 degrees. Place tofu in blender; process until smooth. In large saucepan, cook onion and garlic in hot oil until tender. Add tomatoes and oregano. Bring to a boil; reduce heat. Simmer about 3 minutes. Stir in tofu, rice, spinach, 1/4 cup of cheese, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook in greased 1 1/2 quart casserole dish for 30 minutes at 350 degrees. Top with remaining cheese and sesame seeds.

Best Macaroni and Cheese in the World
Ingredients (use vegan versions):
1 1/2 cups of plain vegan soymilk
1 cup of water
1/3 cup of tamari or soy sauce
1 1/2 cup of nutritional yeast
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon vegesal or in lack of fancy product, just use salt
1/4 of a block of firm (not silken) tofu
1 cup of canola or vegetable oil
1 1/2 lbs of pasta of your choice preferably macaroni
a relatively large baking pan (like a brownie pan)
1 dollop of vegan mustard (optional)
Directions:
This is very simple and tastes amazing!
Pre-heat oven to 350 degrees Fahrenheit.
Boil water in a big pot for the pasta.
All of the ingredients sans pasta can easily go in a blender liquid and
powdered this is by far the easiest way and the only was I do it.
Once pasta is cooked drain I and put it in the baking pan pour the
"cheese" sauce over the pasta.
Bake until the top of the pasta looks slightly browned and crispy about
15 minutes but not too crispy because that is gross.
I honestly do not know the serving information or nutritional content I
can tell you it feeds a heck of a lot of people and if you are cooking
for yourself it will last about 5 days if you eat it for all three
meals of the day.

Tofu rice croquettes
Total servings: 8
Ingredients
1 cube vegetable stock
1 tsp curry powder
50 g white rice
2 eggs
750 g tofu
1 onion
1 cup of oil
50 g bread crumbs
Directions
Boil the rice in 2 time its volume water until soft and cool down a bit. In the meantime, chop the onion and bake in 1 Tbs oil until tender. Separate the eggs. Mix the egg yolk with the tofu, cooked rice, onions, vegetable stock and spices.Knead the mixture with your hands and form croquettes. Roll them through the beaten egg white and then through the bread crumbs.Deepfry both sides in hot oil until golden brown.

Judges Choice: Tofu Burger
yield: 6 burgers
Ingredients:
1 lb tofu
1/2 cup whole wheat flour
3 Tbsp. nutritional yeast
2 Tbsp. vegetable bouillon powder
pepper to taste
2 Tbsp. soy sauce
1/4 cup (or more) sesame seeds
1 small scrubbed potato
1/4 tsp. (or more) garlic powder
onion powder to taste, or one small onion
Grind the tofu, potato and onion (if using) in a food processor. Don't let it get too fine. Mix in remaining ingredients, shape into burgers and bake at around 350 degrees on a very lightly oiled cookie sheet for 15-20 minutes, turning once. They can also be fried.

Tofu and Oat Veggie Burgers
INGREDIENTS:
1 container firm or extra firm tofu, pressed
1/2 cup oats
1 carrot, grated
2 tbsp instant potato flakes
1 tsp soy sauce
1 tsp garlic powder
1 tsp onion powder
salt and pepper to taste
oil for frying
PREPARATION:
Mash together all ingredients until well combined. Form into patties. Fry in oil on both sides until lightly browned.

Tofu Cheese (like Nacho or cheddar)
I got this recipe off another veg board, and oh boy, is it good!! I ate the whole batch with a spoon - it's really that tasty. It's orange, somewhat like Kraft cheese, and to me at least, it's quite convincing. A cross between nacho and cheddar, I think. Yum!

250gms silken tofu
3 level tbsp nutritional yeast flakes
2 TBSP natural peanut butter (or tahini)
1? TBSP light miso
? t salt
? LEVEL teaspoon paprika
1 tsp prepared yellow mustard
1 tsp onion powder
1 tsp garlic powder
4 TBSP salsa (I like Master Foods medium salsa)
Put all the ingredients in a blender/food processor and process until very smooth. Chill thoroughly (CHILLING IT IS IMPORTANT. It tastes even better the next day.)

TOFU CHEESE RAREBIT
1 cup cashew pieces
2 1/3 cups water
2 cups tofu
1/4 cup oil (or you may use water)
2 1/2 tsp salt
1 Tbs seasoning
1 Tbs onion powder
1/4 tsp garlic powder
1/4 cup yeast flakes
1/2 cup pimentos (or red peppers)
1/4 cup lemon juice
Blend 1 cup water with cashews on high speed 1 - 2 minutes until creamy. Pour into saucepan. Blend rest of ingredients with remaining water until smooth. Pour into saucepan with blended cashews. Bring to boil; reduce heat and simmer until thick, stirring constantly. Serve over toast, pasta or grains.
We love to put onions and tomatoes on toast and then pour this cheese on top and grill in the oven. Really delicious.

2 tsp freshly squeezed lemon juice
1 garlic
1 tsp Dijon mustard
Blend until smooth. Serve hot or cold.

1/3 cup raw tahini (if you don't have tahini, you can use raw sesame seeds - tahini is

1 tsp dried basil
1/8 tsp turmeric
1 garlic
1/4 tsp freshly ground black pepper
Put all ingredients in blender until smooth. Serve sauce warm or at room temperature. Great topping for Baked Potatoes.

it tastes really nasty compared to proper tofu!
