What can I make for dinner using some (or all) of the following ingredients?!


Question: After going to Allrecipes.com and doing and "ingredient search", I realized that I have many of the items used in moussaka & ratatouille. I don't even know what they taste like, though.

I love grilled vegetables, but I have never made them. The grill is ready to fire up if I get some suggestions in that direction.

eggplant (one)
garlic (several cloves)
red onion (one)
russett potatoes (two)
zucchini (one)

(I already ate the fresh mushrooms. Note no bell peppers, they don't like me.)

chili beans (two cans)
Classico Tomato Alfredo Sauce (1-1/4 quarter jars)
garbanzo beans (one can)
gnocci (one package)
great northern beans (one can)
green beans (one can)
pinto beans (one can)
red beans (three cans)
tomato sauce (one can)
vegetarian broth (one can)
white beans (one can)
wild rice (one can)

yellow squash (frozen)

Of course, I have some staples, too:

cheese (parmesan & shredded)
eggs
milk
whole grain bread

I'm trying trying to lose weight, too.

rub the veggies (eggplant, onion and zucchini) with a little olive oil and grill them. you can serve them hot or cold on some of your whole grain bread as a sandwich or just as a side dish to something else. i like to sautee 2 cloves of garlic in olive oil, add a can of great northern beans and some rosemary and then mash it all up into a spread . . . that could go nicely on the sandwich or you could put the grilled veggies and some of the bean mix on top of a green salad. maybe a little balsamic vinegar would be good on that too, or some pesto sauce. i'd skip the potatoes for grilling and/or if you're going to have bread and/or beans along with the vegetables you've grilled. good luck!
