Immitation chicken and DUmplings.. any good recipies??!


Question: HI.. I'm a lacto-ovo vegetarian, and one thing I haven't had in YEARS (since I ate meat) was "Chicken and dumplings" stew.. mom used to make it..

I did try making fake chicken and dumplings once, but the dumplings didn't cook thoroughly..

Anyone got a good recipe and handy tips on how to make the dumplings perfect??

I'm not picky.. if you want me to use bisquick or something, I'm game.. I just eat no meat, anything else is fine..

what fake chicken do YOU like in your chicken and dumplings stew?

My dumpling recipe:
1 cup flour
1/4 teaspoon salt
2 teaspoon baking powder
1 tablespoon shortening
6 tablespoon milk (or milk substitute)

Mix thoroughly, add a touch more liquid if it is too dry.
Plop spoonfuls into broth or stew that is already boiling
simmer it with the lid on for 10 to 15 minutes

That is it. The kids love this recipe. You could easily do this with a vegetable stew, and maybe add artificial chicken flavoring in it. To make it taste old fashioned, use onion, celery, and carrots in the broth. You could probably find some fake "chicken" meat to put in it too. Then add fresh ground black pepper on top.

I am not a big fan of tofu... but I know tons of people who substitute chicken w/ tofu.

Dice up the tofu and saute it in a skillet w/ butter and seasoning salt and pepper. Get the firm kind.

For quick and easy dumplings take a can of biscuits and quarter them.

Boil chicken broth. Add some chopped celery and onion and poultry seasoning and your tofu.... You can plop your biscuits down in the broth... Sometimes I add a bit of flour to thicken it up a bit.

Just keep checking your dumplings until they are fluffy in the middle.
