Fast and tasty veggie meal ideas...?!


Question: My boyfriend's coming over for dinner. I napped all day long. He only eats fresh foods (no frozen type of thing). Any ideas for quick and tasty food? I live next to a grocery so ingredients aren't an issue. Also, no Asian food - he is Asian and wants something different.

Any ideas appreciated, even if it's just a starter or a side or something.

Some of my favorite fast vegetarian meals:

1) Grilled polenta topped with garlic-sauteed kale (I use the already prepared polenta)

2) Greek mushroom salad (just mushrooms, swiss cheese, olive oil and lemon), pita and hummus

3) potato soup with homemade croutons

4) Portobella mushroom sandwich on sourdough: saute sliced mushrooms in olive oil seasoned with thyme and garlic. Remove mushrooms and wilt spinach in the same pan. Put mushrooms and spinach on toasted or grilled sourdough and top with sundried tomatoes and fresh parm.

Straight celery?

How about a salad with tomato, cucumber, sweetcorn, raw carrots and lettuce with some wholemeal pasta and grated cheese? That's my fave veggie meal when I'm in a rush.

Black Bean-Feta Salad

Your Ingredients: (serves 6 to 8)

3 (15-ounce) cans black beans, rinsed and drained
3/4 cup olive oil
1/2 cup red wine vinegar
1 cup chopped freshly parsley
2 T fresh oregano
4 scallions, sliced (green tops included)
3 medium tomatoes, diced
1/2 pound feta cheese, crumbled
1 tsp freshly ground black pepper

COMBINE the first 6 ingredients together in a bowl and mix thoroughly. Cover bowl with plastic wrap and refrigerate mixture about 4 hours.

JUST before serving, add the diced tomatoes, crumbled feta cheese, and freshly ground black pepper. Toss to blend.

SERVE immediately.

Pistachio-Apple Salad

Your Ingredients: (serves 4)

4 Granny Smith apples, peeled, cored, and diced
1/4 cup golden raisins
1/4 cup chopped dates
1/4 cup sweetened dried cherries, chopped
1/2 cup unsalted pistachios, coarsely chopped
1 medium rib celery, diced
3/4 cup plain vanilla yogurt
1 T safflower oil
1 T honey
1/2 tsp cinnamon
1/2 tsp curry powder

COMBINE the diced apples, raisins, dates, cherries, pistachios, and celery in a large bowl.

WHISK together the yogurt, oil, honey, cinnamon, and curry powder until smooth and creamy. Add to the apple mixture and toss well.

ARRANGE a few leaves of romaine lettuce leaves on a salad (or dessert) plate and place a dollop of pistachio-apple salad on top. Sprinkle with a pinch of cinnamon.

Vegetable Stir-Fry

Your Ingredients: (serves 4)

3 T vegetable oil
2 cups fresh broccoli florets
2 medium carrots, peeled and thinly sliced
1 bunch scallions, sliced into rounds (green tops included)
1 large red bell pepper, diced
2 medium zucchini, sliced into rounds
10 oyster mushrooms, sliced
4 cloves garlic, minced
4 tsp cornstarch
1 cup cold water
1/3 cup soy sauce
6 cups hot, fluffy white rice

HEAT vegetable oil in a large skillet (or wok) over medium-high heat. Stir-fry the broccoli and carrots about 5 to 6 minutes. Add the scallions, red pepper, and zucchini and cook for about 2 minutes. Add mushrooms and garlic and toss ingredients well and cook until tender (but not over done).

WHISK together the cornstarch, water, and soy sauce and add to skillet. Cook and stir ingredients until sauce has thickened.

SERVE immediately over hot, fluffy white rice.

When you say fresh are you saying he's raw foods only?

If so:

Make a stunning little fruit salad. Just grab a half dozen random fruits and throw some nuts in.

If not:

get wheat tortillas, sautee some veggies, cook some black beans (or kidney beans, rinsed) to tenderness with cumin and paprika, throw it all together in a wrap and mm. nummies.

I love simple salad wraps!
Nice with 'normal salad (leaves, carrot, celery, spring onion etc.), and also great with a can of mixed bean salad.
I could live on wraps - the possibilities are endless!

do a veggie pizza buy some canned pilsbury scresent rolls lay them on the bottom of a 9X13 pan bake until its golden brown mix 1 8ounce package of cream cheese w/ about a half cup of sour cream a teaspoon of dill weed seasoning and maybe a little bit of garlic spread the cream mix on top of the cresent roll crust and chop cauliflower, carrots, broccoli, and any other veggie you want put in the fridge let cool

Bean burritos. My favorite.
