Cheese replacement that is not soy.?!
Answers: We are on a Gluten Free Casein Free diet for my son's autism and I am looking for a cheese replacement for things like grilled cheese sandwiches and cheese pizza. Is there a product out there that isn't soy based (like tofu) that can conform with this diet?
You are going to have to look at the Nut(Almond) & Rice Cheeses in your stores. I personally have not found 1 that didn't have Casein (my own allergy also) in it.

Cheese made from cow’s milk is one of the most dangerous and destructive foods one can consume! Many vegetarians, who wouldn’t consider eating animal flesh, often load cheese onto their salads, not realizing that they are eating a food that is even more dangerous than animal flesh. Well, we have a nice surprise for you in this week’s recipe – a 100% dairy free vegan cheese – that can be used wherever a dairy cheese would normally be used:
? cup cold distilled water
4 Tablespoons agar agar flakes
? cup raw almond butter
? cup fresh lemon juice
? cup Nutritional Yeast flakes
? cup red bell pepper, cut into pieces
1 teaspoon onion flakes or powder
? teaspoon garlic powder
1 teaspoon Celtic Sea Salt (optional)
Place all ingredients except water and agar agar in a Vita Mix or other blender. Place cold distilled water and agar agar in a small saucepan and bring to a boil, stirring to dissolve agar agar. Remove from heat and add to blender ingredients and process until creamy and smooth. Pour into mold and refrigerate until set. When thoroughly chilled and set, turn out onto a dish. This vegan cheese slices and melts well. ENJOY!

There are no cheese substitutes that I know of that do not include either gluten, casein, or soy.
My only suggestion is to check your local Whole Foods Market or natural food store and read, read, read.

Galaxy Food Rice Cheese slices. Some of their varieties are now casein free - check the ingredients to make sure. There is a cookbook called the Uncheese Cookbook, they may have some recipes with ingredients you can use.
Rice and nut cheeses seem like your best option, but a lot of them have casein and can be hard to find. Good luck!
Why not just cut it out? Pizza is just fine without cheese.
My younger brother has aspergers and he is on the same diet. Unfortunately we haven't found anything locally but this website has a few options that maybe you will have better luck with. We just order pizza with no cheese and load it up with other toppings, I know it's not the same though. I hope you can find something that works for your son!!
