Anyone have any good vegetarian recipes?!


Question: That doesn't involve tofu please.I can't stand eating meat anymore and I don't know what to cook besides pasta,beans,and rice.

Try making polenta, I love it. You can buy it preformed at stores in garlic or tomato basil flavored. Its a tube shaped 1 lb. You slice in about 1/2 slices and pan fry or bake. How you top is up to you. I use sauted tomato/zucinni/onion/garlic after pan frying and then at last 2 minutes in pan I add some pepperjack cheese. If you are going to bake, just slice and layer items in glass pan. Also very good.
If you want to try to make your own, it's very cheap and easy. But some whole kernal(be sure to read package) corn meal. The follow directions by boiling water and adding cornmeal. I add garlic and onion powder while cooking. It will be a lumpy texture like oatmeal, but you can form in on aluminum foil so it can be same as store bought. Or I use it just in the oatmeal form. Again, top as you like. Below is a link for spinach polenta which is fabulous!
Another good thing is using lentils instead of refried beans. Just boil them down and run through processer(or smash with a fork) then put on your tortilla and make tostada's. It's a good different flavor. Barley is another thing I really love, it's very versatile. Cous Cous too. I've added some of my favorite recipe links. Good luck!

Here's one i got from my pastor. Cut up some portabello mushrooms ( i found shitake works good too), season them with salt and pepper or whatever you like, mix with cheese( Monterrey Jack with jalapenos taste good), and saute in some olive oil, we put it on toast

Or simply mix some vege for a garden salad, pasta salad, potato salad

Else, simply heat a little oil , ginger, pinch of salt, vegetables of your choice, stir fry it. (Alternative ingredients like black fungus, mushrooms, diced carrots, lotus roots etc..)

I love Lebanese food for great vegetarian without tofu, here's one of my favourites

Rice & Lentils - Magadarra

2 large onions sliced
2 table spoons olive oil
1 cup long grain rice (I like basmati)
1/2 cup brown lentils
4 cups water

Heat oil in a saucepan and fry onion slices on moderate heat stir constantly until golden, this should than 10-15 minutes
Add rice and stir through until rice is coated with the oil and onion mix.
Increase heat and add water, boil until air holes start to appear in the rice, add lentils and turn down heat, cover saucepand with a tight filling lid and cook until tender.

Can be eaten hot or cold, I like my lentils slighty crunchy so you can andd them to the pot earlier if you like. You can also use a rice cooker once all the frying is done.

I like to try new cuisines when I get bored. Have you tried latin foods (other than American verisions of Mexican)?
El Salvador has bean or cheese papusas with curtido (kind of like a closed corn soft taco served with spicy cole slaw).
Brazil ( and most latin countries) has fried yucca and black beans. Even Mexican authentic food has napalitos (catus) which is really good.
Yucca Fritta (fantastic served with black beans)
INGREDIENTS
1 pound yucca root,* peeled and sliced into french fries
1/3 cup canola oil
salt to taste
1 lime, cut into wedges (optional)

DIRECTIONS
Heat the oil in a large heavy skillet over medium-high heat. Place the yucca fries in the hot oil and fry until golden brown, about 20 minutes. Turn occasionally to brown them evenly. Remove from the skillet with a slotted spoon or spatula and season with salt. Squeeze lime juice over them if you like and serve immediately. I like to top the yucca with fresh grated parmesan cheese, garlic and onion powder.
*Frozen, peeled yucca can be found at latino markets.


Brazilian Black Bean Stew
INGREDIENTS
1 tablespoon canola oil
1 medium onion, chopped
2 cloves garlic, minced
2 (1 pound) sweet potatoes, peeled and diced
1 large red bell pepper, diced
2 (14.5 ounce) cans diced tomatoes with juice
1 small hot green chile pepper, diced
1 1/2 cups water
2 (16 ounce) cans black beans, rinsed and drained
1 mango - peeled, seeded and diced
1/4 cup chopped fresh cilantro
1/4 teaspoon salt


DIRECTIONS
Heat the oil in a large pot over medium heat, cook onion until tender. Stir in garlic, and cook until tender, then mix in the sweet potatoes, bell pepper, tomatoes with juice, chile pepper, and water. Bring to a boil, reduce heat to low, cover, and simmer 15 minutes, until sweet potatoes are tender.
Stir the beans into the pot, and cook uncovered until heated through. Mix in the mango and cilantro, and season with salt.

do you eat white fish? or just vegetables?
if you do, then fish tacos are a very good choice
