How do I use up these sweet potatoes?!


Question: Anyone have a creative dish using sweet potatoes?

I'm interested in a really hearty soup or stew, a casserole, or anything else creative (maybe a good stuffed sweet potatoes recipe?).

Nothing extremely spicy or extravagant because I want my 1 year old girl to enjoy it too.

I would just get out a cook book I cant think of any thing off hand I like them hot with butter OMG thats the best was make a sweet potatoe pie

Am no vegan (as you very well know) so i can't give you the usual recipes that I know. But I would suggest a sweet potato pie!!!!!!!!!!!!!! One of my favorites but with cream and butter of course. You can leave those out since you are a vegan. With your smarts, I am sure you can come up with a very suitable substitute.

my grandma's leftover recipe:
-two pounds of sweet potatoes
-8 oz of gravy
-half a pound of meat of your choice(I recommend turkey breast+ replace with veggies if u r vegetarian)
-a cup of diced veggies (carrots, celery, beats... watev)
- one cup of chicken broth
stir at medium heat on stove for 12mn

Here is my recipe for herbed skilled sweet potatoes. It makes about 2-4 servings or so. :

2 pounds sweet potatoes
2 teaspoons smoked paprika
2 teaspoons kosher salt
Fresh black pepper
1 tablespoon butter
1 tablespoon olive oil
2 cloves of garlic, minced
Small handful fresh herbs, minced - sage and thyme


Wash the sweet potatoes - don't peel. Cut into a fine, 1/2" dice. Toss with paprika, salt and a little black pepper.
Heat a cast iron skillet over medium-high heat. Melt the butter and oil. (Omit the butter to keep these vegan; it won't affect the recipe much.) Add half the sweet potatoes. Let cook without stirring for about three minutes, then stir and turn them over. Let cook for another few minutes - until they are quite golden and seared.Add the other half, along with the garlic, and cook them all until tender. The potatoes you added first will get slightly mushier and soft, while the ones added later should keep their shape with a tender bite.
Just as they get tender stir in the herbs and cook just until wilted and fragrant. Taste and add any additional salt or pepper. These are delicious served with a little yogurt and parsley stirred in too.

Depends on how many you have. I usually have my daughter buy a bushel when she passes through Ga. I just store them in the kitchen and they keep for a long time. Sometimes my wife cuts them crosswise and fries them. Sometimes she slices them like french fries. uses sugar and butter and candies them in a frying pan. sometimes casserole. Sometimes bakes them in the micro-wave.(put a little water in a bowl and pierce them 3 or 4 times with a knife). Sometimes sweet potato pies. There are many ways to fix them. you can look them up on your yahoo search bar. If you need further instruction I can get it just let me know.-Bea
PS; I eat them any way they are fixed. I like them with brown sugar , nuts and marshmillows. in a casserole the best. Pies are nmade just like pumpkin pies are.

I saw you really wanted a soup or stew so I didn't answer..but since you contacted me. Here's one of my favs.
Oven Roasted Sweet Potatoes
pre-heat oven 400 F
Wash, dry & cut Sweet Potatoes into even sized chunks (smaller they are the quicker they cook) Peeling is optional, I don't.
Spray a cooking spray a Baking Sheet. I use Olive Oil.
Put into a bowl Sweet Potatoes, salt, pepper & other herbs you like... Rosemary is great. Give a good mix. Pour on to baking sheet, slide into the oven. Bake until tender 15-45 mintues depending on the size. You can do the same thing cutting them into wedges making the Oven Fried Sweet Potatoes. This also works with white potatoes. Oven roasted Veggies of all kinds are a main stay in my house. Enjoy.

Sweet potato and red pepper soup is one of my favourite foods in the world. Just olive oil, onions, the sweet potatoes, red pepper and seasonings to taste, put in a blender when cooked. Lovely and creamy, but it's better when spicy.

The only time I use sweet potato is for juice. I juice 1 sweet potato 2 pear and a dash of tumeric. It is really sweet and yield about 8 oz or so of juice.

I would make sweet potatoe fries mmmmmmmmmmmm
4 medium sweet potatoes
2 Tablespoons vegetable oil
one-half teaspoon salt
one-fourth teaspoon pepper

Heat oven to 450 degrees. Grease jelly roll pan and
set aside. (approx. size of pan 15" x 10" x 1")

Cut sweet potatoes into one-half inch wedges. In a
bowl, mix the potato wedges in oil; covering well.
Sprinkle with salt and pepper.

Next- place the wedges in a single layer on shallow
pan or cookie sheet. Bake 25 to 30 minutes; turning
occasionally until potatoes are golden brown and tender
when pierced with a fork. Serve when hot.

Sweet Potato Bread
1-1/2 cups white sugar
1/2 cup vegetable oil
2 eggs
1-3/4 cups sifted all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1-1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/3 cup water
1 cup cooked and mashed sweet potatoes
1/2 cup chopped pecans

Combine sugar and oil; beat well. Add eggs and beat.
Combine flour, baking soda, salt, cinnamon and nutmeg.
Stir flour mixture into egg mixture alternately with water.
Stir in sweet potatoes and chopped nuts.

Pour batter into greased 9x5 inch loaf pan.
Bake at 350 degrees for about one hour.

Put them in you're neighbors tail pipe, but be sure to soak them first, so they expand inside the tail pipe.
