There are tons of different flavours of soy and tofu ice creams, usually competing with popular ice cream flavours of non-vegetarian ice creams.
I am not sure if there is a soy whip cream, but I know there are many non-dairy whipped creams out there. Can't tell yah what the dairy substitute is - I don't eat stuff that has fake ingredients in it, that are not natural.
I am not sure if you are familiar with Whole Foods, but they have tons of vegan/vegi alternatives.
there is vegan whip cream. not like cool whip, but the kind in the can (the best kind!!).
they have it at my local co-op and that's the only place i've seen it, but i know they have it.

Rich's non-dairy whipped topping in the freezer section is accidentally vegan.
Soy Decadence/Soy Delicious brand are the best. They have a coconut, peanut butter chocolate, and mint chocolate chip flavours. There are tons of flavours and brands - that's just my favourite.

Sure, there's tons of soy ice creams available.
You can even get them at stores like Jewel-Osco/Albertsons, there's ones like "Turtle Tracks" or "Coconut Craze" or "Peanut Butter Zig Zag" (my favorite).
There are soy ice creams at Dominicks/Safeway too!
Whole Foods, obviously, has a ton. Whole Foods also sells soy whipped cream - normal whipped cream is otherwise NOT vegan, sorry...
Sprinkles... depends on the type. Read the ingredients and you'll know.
Oh, you NEED to try Temptation vegan ice cream. It is so flipping good, it's insane! They have tons of delicious flavors! I put in a link to their website. Very fattening but it is the best I have ever had, hands down. Vegan sprinkles aren't very good, in my opinion. The whip cream from Tofutti is pretty good, but I'm not sure if there's still trans fat in it or not. Trans fat is extremely damaging to the body so you have to watch out for that in vegan creamy-type products.
I personally like the peanut butter and chocolate one :) If you want whip cream on it, you could, but whip cream is typically made from milk or animal byproducts.
