How about veggies and quinoa....I cook a big pot of quinoa every couple days and I make salads with it (add spinach, tomatoes, avocado, and some sort of oil and curry dressing...or I make a stir fry with olive oil, soya sauce, and ginger) and I eat quinoa with at least one meal a day.

Beans! Get some turtle beans (black beans) and cook em up. Save the water (it turns black and is sooo good) and make some spicy black bean soup. Take your beans, add some to the soup and keep the rest for meals. (Gallo Pinto) add some cooked rice, beans and olive oil to a pan, fry it all up with garlic and salt. Eat this with veggies, tofu...(I eat it for beakfast).

Make some smoothies, (Silken tofu, frozen veggies and rice/soy milk)

The trick is to keep some fruit and cookies or something on hand so you don't get so hungry you binge. If you are vegan you have to be prepared. Carry some nuts with you and when you know you wont be eating for a while, eat some so you aren't starving and go straight for pasta when you get home.

Another thing that I do is cut up lots of veggies and keep them in my fridge for quick stir fries.

Hope this helps, good luck, think ahead!

Try some wholesome carrots in moderation.

Hi. I'm new to this vegan thing. But you can try these dishes that I've been eating:
>Calalloo with baked beans and potatoes.
>Cabbage w/Carrots and Rice( I prefer rice & peas...yum^_^)
>Stew w/Red peas, irish potatoes, carrots and anything you wanna add. Side that with Broccoli or Cauliflower.

When cooking, I always use Olive oil with sauteed garlic. I just love the taste of garlic. Try these and let me know ok...:-)

Hey!

Fear no more! :)
I found some recipes that might help you stay of pasta and other carbs. I'm not a vego, but I love vegetables and make these recipes often.

Slainté (to your health)

Black beans w/ white rice, raw baby carrots, applesauce with cinnamon.

Black kidney beans, sweet corn, garlic mashed potatoes, fruit sorbet.

Stir-fry vegetables and tofu over brown rice with a raw banana.

1/4 of your plate should be protein (beans, nuts, tofu) 1/4 of your plate should be a starch (potatoes, rice, bread) and 1/2 of your plate should be fruit and vegetables.

when I was dieting.. I practically "lived" on "pita pizzas"

I'd take a pita bread loaf and pizza sauce.. the pita bread became the "crust" of a personal size pizza. Add sauce.. low cal or vegan cheese (not too much!) or scrambled tofu.. some veggies.. you can make a pizza for around only 350 calories!! And it's very tasty!

One word - salad (no dressing)
Good luck
