I would go to a farmers market and get fresh veggies and fruit. You sometimes can find soft cheeses at farmers market also.
You will need to still eat protein and since you will not get it from meat I suggest black beans. Low fat Dairy products are also good sources of protein.
If you like veggies burgers my favorite is Morning Star Tomato Basil burgers.
That's a tough one... just buy what you like and enjoy eating. Plus, always try to buy at least a few things each week that you have never tried before.
Our shopping list will be so different from another person's list who's also vegetarian/vegan. Mostly we buy organic food. At the regular grocery store, we buy stuff like garlic, soymilk, tofu potatoes, fruits, other veggies etc.... anything that is cheap or unavailable elsewhere. We hit the ethnic isle and get a bunch of different kinds of noodles and interesting things from different cultures etc. Whole grain crackers, quick oats, frozen peas, canned beans... We get some things from the health food store... different veggies, nuts, seeds, nutritional yeast, maybe some snacks, soap, shampoo, ginger, herbs, etc. At the Chinese/Asian store we get some fake meats, sauce, malt, snacks, drinks, miso, rice, ... We always have a cupboard full of ingredients for baking, cupboard full of different teas,
