What goes well with vegetarian lasagna?!

I would start with tabbouleh. Its light, and will go with the heavy lasagna.

A basic mixed green salad, some vegan garlic toast, and for desert something fruity- like maybe a berry cobbler or fruit sorbet.
My fav. salad is baby spinach, toasted almond slivers (just throw them in a pan and keep moving them around until the brown) and avocado. I make a dressing with spicy mustard, olive oil and vinegar, or balsamic and olive oil.
Dessert should be light, I would do a chocolate mouse with silken tofu and veg. chocolate. Melt and blend...
I love to put Caesar Salad with Lazagna and garlic bread. Top it off with a light dessert like shobert topped with frozen berries and a touch of light custard, or light whip cream.

Ceasar salad....spinach salad (yum)....green beans...peas...any green veggie normally goes really well with a lasagna/spaghetti type dish.
I don't eat dessert but every blue moon so........vegan brownies maybe... personally I'd go with this for dessert
Pineapple Banana Ice Cream

Ingredients:
2 frozen bananas
2 cups frozen pineapple
2 cups vanilla soy or rice milk
1/2 cup sugar (optional)
Directions:
In a Vitamix or a really high-powered blender, add all ingredients. Blend on highest speed for 1-2 minutes or until there are no more chunks of frozen fruit. Scoop into bowls and eat.

This comes out like soft serve and is so delicious. My kids think this is "real" ice cream and eat it up really fast.
You can freeze it, but it comes out a little icy when you try to eat it. It's definitely best fresh.

Last time I checked, lasagna was not a type of cheese, but a type of PASTA.
Marie Callender's frozen Apple cobbler and dutch apple pies are vegan. And awesome.
I'd just make a plain salad with assorted dressings. Leafy greens, cherry tomatoes, some other veggies. Baco's on the side (yeah, they're vegan.)
For garlic bread, I'd spread some vegan margarine or olive oil on some bread, sprinkle it with garlic powder and garlic salt, then broil it til crunchy on top.
Salad wise, this is a favourite of mine and I normally serve it with lasagne or risotto:
Ingredients:
Mixed leaves (iceberg, rocket + spinach)
Roast pumpkin & sweet potato
Golden delicious apple
Dressing:
A little oil
Balsamic vinegar
Lemon juice
Freshly chopped/crushed garlic
As for desert... go with something light, because lasagne can be really heavy. If you have the time, sweet spring rolls are great.
Basically, you stew up apples & strawberries till thick. When the mixture cools, wrap/roll it up in spring roll pastry. When ready to eat, pop in the deep fryer quickly and if you're vegetarian (but not vegan), you can dust these with icing sugar. If you're vegan, you may need to think of a substitute... like, a sweet dipping sauce or something?

Vegan lasagna is a contradiction in terms. If it doesn't have cheese in it, it's not lasagna and you shouldn't call it that.
Sorry, but we have to draw the line somewhere. There are a million different delicious vegan dishes you can prepare, without committing some awful food crime in the name of lasagna by using some weird cheese substitute. Clue: Japanese food.
