Put it in a bowl.
Add the juice of a lemon and leave overnight. It should curdle, so if it does strain it through muslin (or a clean stocking) - leave it to drip, then put in a bowl with a saucer and a weight on top to compress it.
Et Voila! You've got Cottage Cheese! As made by my hubby's Granny!
You can add chives or chopped scallion or owt you fancy!
Enjoy!

Drink it.

semolina
custard
bread pudding

Yogurt, then you can make a salted lassi from that.

Macaroni Cheese

Ricotta. Heat the milk over medium heat to boiling. Add 1/3 litre cream, return to boil. Stir in a pinch of salt and 2T lemon juice. Reduce heat, simmer and stir for a couple of minutes until curds form. Strain through a cheesecloth lined colander for an hour. Gather and refrigerate. For savory, add chopped spinach, and egger and some parm and stuff manicotti or shells with it.

Natural Yogourt.
Heat the Milk and when its hot, put a cup/glass of natural yogourt in the pot with the milk. and cover the pot of milk with lots of blankets and put it somewhere safe, open it after 2 days and walla!!! u got Natural yogourt and you can keep it in the fridge after that :) good luck!
