I like a taco soup without the meat for my veg son. It has a can of pinto beans
can of rice (any kind)
can of black beans
can of yellow corn or hominy
can of tomatoes with chilis (Rotel) or just tomatoes if you don't like chilis
3 packages of taco seasoning (or equivalent)
can of refried beans
salt and pepper to taste
one chopped medium onion
garlic powder to taste

Simmer for at least 30 minutes to blend the flavors - can be frozen into smaller portions. Really good in cold weather.

Try making your beans a little more savory....green peppers,onions, Tomatoes work nice.....make a nice veggie stock to cook your rice in...

have you tried making fried rice? Fry some onions with cumin seeds until brown. Then add some salt, stir, and vegetables. Add you rice and water and boil it off.

I have found if you want to make a washday style New Orleans version and all vegetarian it is easy, one new ingredient I have found that packs a punch and give my veggie entree's a flavour boost is "Smoked Spanish or Hungarian Paprika", they smoke cure the peppers before they crush them, this lends a air of smokiness to your dishes and with a soya sausage, TVP or ground bits in the dried kidney beans or 2 cans, and I use lot of well browned onions drop the whole lot in my crockpot and let it go for the day.

I even fooled a fellow chef friend of mine that they were the real McCoy, with anything for a basic change, dress it up with spices, herbs, various veg, I brown my onions to get all the flavour and goodness out of them, and there are now so many tinned varietys you can make anything quick and health in a short time, a hour or 2 is enough to make it and have it on the table for dinner.
