If you're a vegetarian, it's simple: stay away from meat (includes ham and bacon :-)) and poultry. If you're vegan, then it's a whole different story: you won't eat / drink anything that comes from an animal, i.e. no eggs, milk, etc.
The biggest one is Gelatin, which is a thickening agent obtained by boiling animal flesh/bones. It seems to be in many things including candy, gum, marshmallows, certain cakes, certain cereals, and much more.
The next one is chicken or beef stock - always avoid soups in restaurants unless the kitchen can say 100% that they arn't made with a chicken/beef base. Always check lables of canned soups, beans, etc.
Others to watch for are Casien, hidden animal fats (such as lard), and rennet.
Always quickly browse the ingredients list before buying items until you get used to what is and isn't veggie. :)

it's actually a short list: meat ( beef, pork, chicken/poultry, lamb/mutton, wild game meats such as deer and quail etc, fish and sea foods) and meat by products (including gelatin, sausage casings etc). You get the idea...
Your best bet would be to read up more on what's involved and read labels carefully..
In general, the freshest most varied assortment of fruits and vegetables (soy, beans, nuts, brown rice, potatoes) from local farmers' markets work well for me.
I tend to pass on things that are refined, oily, or too sweet/ salty.

I honestly wouldn't worry too much about secret ingredients. There are animal products in just about everything, including medicines, film, and even car tires. Focusing too much on the marginal ingredients makes vegetarianism / veganism look impossible and stressful.... and this hurts animals by turning off people who otherwise might be interested in going veg.
Meat, dairy, and eggs are the main products that cause suffering. So if you're looking for things to stay away from, you could work on reducing your dairy and egg consumption in addition to being vegetarian. Just a thought! See http://www.caringconsumer.com/resources_...
